Crackers with goat cheese and some wine. I really didn't feel like going to the store and it was that or toast.
Off to a great start this month. I'm really just too lazy to cook.

thinking about what's for dinner tonight is depressing. I can't chew without tons of pain...nor can i breathe through my nose, so every time I put food in my mouth it feels like I'm holding my breath and suffocating, and I end up gasping for air after taking a slurp of broth. :(
This SUCKS!!
So...I'm thinking about what WILL BE for dinner, as soon as I can manage real food. :drool:
Veggie thai curry with a spicy ruby sauce...
or maybe a veggie sub from Subway, with cheese, mayo, lettuce, tomato, a little smidge of hot crushed peppers, and tons of pickles...
or a piece of cheese pizza with garlic and oregano, and a side salad with balsamic vinaigrette...
But for now I'm just gumming soup, baby food and oatmeal and drooling on myself. :(

Last night i made pizzas with bobili crust, fresh spinach garlic feta sausage, caramelized onions, goat cheese and fresh mozzarella.

You've never bought spinach? *faints* It's a staple in my house. Like coffee. I put it in everything. If you have a Trader Joe's, their pre-washed baby spinach in a bag is a good buy. Baby spinach tastes better than big spinach, and since spinach can be a pain to wash, I just like to grab a handful out of the bag whenever I'm ready for it. It's good on sandwiches, salads, pizza, pasta, stir-fry, pretty much anything.
The trick to putting broccoli on pizza is only using the tiny soft fresh florets. If you can find broccolini, use that. Mature broccoli gets a bit too tough and woody for pizza.
Damn, now I want pizza.

No, that's creamed spinach. Never boil spinach, it's much too fragile! You can stir-fry it or steam it if you just want it pre-cooked. I've never heard of creamed spinach on pizza, but what the hell. Maybe you could use it instead of tomato sauce? Here's a that I found. Enjoy!
ETA: Spinach is never "crispy" even if you don't precook it. It's really fragile and it wilts easily. I put raw spinach on my pizza without precooking it, and there's no crunch at all.

Just so long as the spinach is mushy lol! I don't like tomato sauce on pizza for some reason. Can't stand it. Thank you for the recipe.

I chickened out. :( I was walking around the grocery store with my basket, I had the spinach, the broccoli and the cheese and when I started thinking about what I needed vs. what I had at home I started to panic. I put everything back and got more spinach pocket thingies.
I will do it. I just need more mental preperation next time lol!

LOL, baby steps! Trader Joe's sells a very good pre-made pizza dough. You just roll out the dough and top it with whatever you want. It's a lot easier than making the dough from scratch.

Last night I made New York strip steak with a peppercorn marinade and a concoction I call "loaded cauliflower". It's cauliflower baked with a cream cheese, cheddar cheese, bacon, and green onion topping. I don't eat starches so its my substitute for a loaded baked potato. It was YUMMY ;D !

I've never made veggie burgers from scratch before, but they turned out so delicious! I am really surprised and impressed. And excited because now that I have a recipe for the base, I can add all kinds of different flavors (mmm.... spicy!).

I second this. I looooove their dough. It was pretty much what I lived on during high school and junior college.
I was going to make a baked potato but it is sooo incredibly hot here. I really don't want to use the oven. I'm thinking of going for some sushi. This whole vegetarian thing isn't working out for me. I never know wtf to cook either. I'm a killer cook when it comes to fish dishes. I've gotta eat sushi or salmon at least once a week. Baby steps I suppose. I haven't had any other kind of meat or fast food in over a year.

I stole this from a low carb website
Loaded Cauliflower
16 ounce package frozen cauliflower (or up to 2 pounds fresh cauliflower)
8 ounce cream cheese, softened
8 ounce cheddar cheese, shredded
4 green onions, chopped
1/4 teaspoon salt or to taste
1/4 teaspoon pepper
3-5 pieces bacon, chopped and fried until crisp
Paprika, optional
Cook the cauliflower until soft, about 8-10 minutes; drain very well and break up the florets a bit with a spoon. It's also very good if you leave the cauliflower a little chunky. Put in a greased 8 x 8" baking pan or a 2-quart casserole. In a seperate bowl mix in the cream cheese, cheddar, green onion, salt, pepper and bacon. Put the mixture on top of cauliflower. Dust the top with paprika, if desired. Bake at 350º for 20-40 minutes, until browned and bubbly.
Makes 6 servings
Per Serving: 324 Calories; 27g Fat; 15g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs

Tomorrow we're going to garden on our balcony all day with the herbs and veggies and planters we bought, set up the birdbath and whatnot. Then I'm baking rice-oat-polenta bread from scratch (I really want to make a different kind of bread, dammit, but K keeps begging for this one every damn week) and making a salad with baby spinach, steak, cherry tomatoes, toasted hazelnuts, and balsamic vinaigrette. K started the steak marinating tonight in honey and liquid smoke and a little Rendezvous seasoning, so it should be delicious. I love steak salad.
Oh, and he's making his wonderful wine-butter mushrooms to go atop the bread. We may do the salad for lunch and have the bread and mushrooms for dinner, I think. But he makes the most delicious mushrooms, he cooks them with tons of garlic and some butter and then pours in red wine and lets it reduce for over an hour until it's like a thick gravy. It's so good over fresh bread, you have NO idea. Augh. I can't wait.
