We had grilled boneless skinless chicken breast and grilled zucchini. Then add a little chipotle tobasco and BAM a spicy healthy dish. 240 calories for the whole breast, and 2 Cups of Squash.

Just made a HUGE pot of sauce yesterday that we wound up not eating. So, penne rigati with my sauce and homemade meatballs. Add a side of salad and garlic bread to that.

Not sure what's for dessert though.

Tonight is chicken milanese, sweet corn, cornbread stuffing, and salad. Maybe some buttermilk biscuits if I really feel up to eating that much carbs!

You've spoiled me for anyone else's apple crisp but yours!!

I think we're going with homemade funnel cakes, though.

And "Feasting on Asphalt" was awesomely amazing (except for when he fell off his motorcycle and got hurt)! I also watch "Iron Chef America" just because of him! lol

I actually haven't seen Feasting on Asphalt! Want to though. I only watch Iron Chef when Mario Batali's competing....again, just because he's hot.:P
Couldn't tell you what dishes anyone made on any given episode b/c I'm too busy drooling over Signor Batali. }:D

Sorry for the threadjack; I actually have NO idea what I want for dinner. I've been un-inspired today!

^^ you know what else I've never seen? "Behind the Eats", the episode where they show behind the scenes on the set. I actually don't want to know how they do all the special effects and gags and stuff...it'd be like a magician revealing all his tricks! :P

Anyway, tonight...I bought some tomato basil soup, had a few bites and realized it tasted awful, so...leftover blueberry waffles it is! With chocolate almond milk.

It still wasnt nearly as good as when you made it for me...but hopefully it will get better. I burned it a little bit...

No worries, it's good that way! I like it crispy on the outside and all soft and creamy in the middle. Breading it helps, but it's totally unnecessary for everyday meals. I'm so tickled that you like it so much and are cooking it! I LOVE to see people cooking real food and enjoying it!

Tonight we didn't feel like grocery shopping and didn't have much, so we had pasta. Whole-wheat rotini. I sauteed tofu, garlic, artichoke hearts, pine nuts, and spinach in olive oil and tossed that with the cooked pasta. K got sun-dried tomatoes on his and I got crushed red pepper, and we topped it with nutritional yeast. Nothing too fancy, but it was yummy and filling.

I'm taking the leftovers to work for lunch tomorrow, and I made K's lunch too - leftover mango-chicken sausages and grilled onions. I cut up the sausages and made him some rice in vegetarian chicken broth with a little toasted sesame oil, and stirred up the hot rice with the cold sausage and onions so the flavors would blend. By lunch tomorrow it should be pretty good.
