Grilled fish provencal - high protein, low fat, low carbs, dairy-free... but amazingly still really tasty

I feel like eating comfort food and since being in the States it has turned to Mexican food:
I'm making spanish rice, sauteeing sliced onions, mushrooms and peppers, topping with pico de gallo, guacamole, a little sour cream and a sprinkling of cheese. YUM!!

Tonite - BBQ

Ribs, Artichoke, Ceasar Salad and Garlic bread

Tomorrow

BBQ Chicken Breast, Asparagus, Rice

Ended up just eating salad and artichoke... the ribs made my stomach churn - too fatty. No good.

Grilled chicken breast and rice, with some fresh snow peas and green peppers.

Frozen (thawed to the point where I can eat it) mango for dessert :)

I ended up having a bbq snack wrap from mcd's and a apple salad. I thought they were healthy choices given what i had to work with and they were STILL 10 weight watchers points together.

BBQ anything sends off Sugar alarms!!!! And McD's is notorious for hiding unhealthy shit in their "healthy items" just like every other fast food place!

I always wonder if what I eat would seem weird to others, anyway I made chicken breasts- pounded, and rolled around fontinella cheese, sliced hot banana peppers, and wrapped with bacon- cooked on the grill.

I just made my husband king ranch chicken casserole (from super supers, basically a Mexican lasagna made with chicken and corn tortillas) I served it over mixed baby greens with sweet and sour carrots and garlic bread. He works till 10 pm so i try and make him a nice meal mid day if i can.
He hates the food around his work.

I just had the typical english sunday roast, chicken,stuffing,yorkshire puds, cabbage,roast potatoes and lots of gravy :)

I justy had the most *amazing* grilled chees ever. Earlier I cooked a filet mingnon (sp) and asparagus. Well I made a grilled cheese in the same pan as the meat and oh. my. God. is was sooo good. Tasted bacony and garlicy it was awesome.

Damn, I should really learn how to cook! I am addicted to Whole Foods, if I'm not eating a veggie sub from Subway I'm up in Whole Foods buying my dinner. I also keep a stock of delish organic meal replacement bars. The chocolate ones cure my chocolate cravings....that or a pint of mudslide rice dreams ice cream...

I had a huge Olive Garden lunch today, early-like before noon- and I'm STILL full.

K and I went out to dinner last night and had the BEST meal I've had in so long. We started out with cocktails; mine was rum and blood-orange juice with a squirt of lemon-lime soda, and his had some kind of tequila and fruit juice with muddled mint. We shared a chilled salad of watermelon and canteloupe with grilled onions, pine nuts, olives, goat cheese, and herbs in a lemony olive oil vinaigrette - sounds like an odd combination, but it was incredible. There was also a perfectly chewy, crusty baguette with the most amazing olive oil I've ever had to dip it in. They served it with two olives in the olive oil for extra flavor.

Then the meal came - K got a rare culotte steak with pommes frites and raw baby spinach in some kind of delicious lemon-raspberry dressing. I tried a bite and it was one of the best steaks I've ever had. I ordered a moussaka - lentils cooked in herbs and red wine, spread across the bottom of a stoneware dish, layered with sliced eggplant on top and covered with goat cheese and crumbled feta, and baked. It arrived still piping hot from the oven, with the cheese perfectly browned.

After dinner I ordered a 10-year-old port and K ordered a snifter of brandy, and we lingered outside on the patio until after 10, just savoring and smiling at each other. I don't think we said much of anything. It was one of the best dinners I've ever had.

What I do that works really well is eat seasonally and buy local. I have in my mind every week when I go to the grocery store what I am aiming for. i want one yellow/orange veggie, one green veggie and leafy greens. Then I might get extra stuff like onions, cukes...less substantial produce. I will get canned soups of cous-cous in a box, rice same deal. For breakfast I have yogurt and fruit or oatmeal and fruit for lunch it all depends I just avoid high salt, sugar and fried foods- snacks are small handful of unroasted nuts, high calcium low-fat string cheese or raw veggies or grapes....You can steam all of the veggies in one night if you are crunched for time and then heat up a can of soup, cous-cous or rice and just add veggies generally that is all so seasoned anyway that you don't really have to do much more. It isn't gourmet, but it keeps you functioning at 100% while you juggle, business, dancing, working-out/personal care, family, lover, school...you know how we do it!

salad made of tempeh, green bell pepper, cucumber, spinach, mesclun w/ red wine vinegar/olive oil.

i'm super scared to eat any raw produce right now because of the salmonella in everything.... which sucks, because I'm trying to eat a high-raw diet!
