I feel like cooking tonight, but it'll be late before everyone's ready to eat. I think I'll make some tortilla soup. I'll bake the chicken with some lime juice and garlic and shred it before adding it to spicy chicken broth with some garlic and onion, corn, maybe some beans and a tomato... whatever's in there. And I'll cut a tortilla into strips and fry it up. I'm looking forward to it, haven't gotten to cook in awhile and I miss it!

Zucchini "lasagna" - zucchinis, tomatoes, onion, fresh basil, fresh thyme, cheese , olive oil, s&p

Brie cheese and rustic baguette

Not sure what (if any) meat will be cooked with it. I guess I'll figure that out in the next half hour... any ideas?

I made Sunday dinner last night and we're having those leftovers tonight. It consisted of:

a whole chicken which I cooked in the crock pot for about 10 hours
sweet potatoes
wild rice
sweet peas
green beans
and a honest to goodness, from scratch apple pie.

Dinner was AWESOME.

I even woke up and cooked breakfast this morning which didn't have instant anything. I'm feeling very Susie Homemaker lately.

That sounds like a complete meal by itself. I don't think you need any meat with a cheesy zucchini lasagna and more bread and cheese on the side.

I :heartbeat cheese  The brie was soooo good. I skipped on the meat and my daughter threw a fit over only getting zucchini, tomatoes and bread for dinner. Ended up frying up a hamburger patty for her.

I love cheese too! As for meat... eh, people don't need meat at every meal. Americans eat way too much meat.

I had leftover soup last night. I love how soup always tastes better and better as it sits in the fridge for a few days. My tortilla soup was pretty awesome for throwing it together in half an hour... I sprinkled a chicken breast with pepper and squeezed half a lime over it, and baked it. While it baked, I sliced some corn tortillas into strips and fried them, then set them aside on paper towels. I sauteed onions, garlic, and a chopped carrot in olive oil, then added chicken broth and about a cup of spicy salsa and some Tapatio. I also squeezed in the rest of the lime. While the broth came to a boil, I shredded the chicken breast, and once the broth was bubbling, I stirred in the chicken, a can of corn, and a can of kidney beans. I let it all simmer for about ten minutes, then served it in bowls with the fried tortilla strips on top. I grated some cheese on K's. It tasted like it took a LOT longer to make than half an hour! The salsa was the secret, I think.

Totally NOT healthy, but ..
Ribeye steak, baked potato, and BLT salad (bacon bits, lettuce [duh], sundried tomatoes).
I just had to have meat AND carbs tonight. I'm PMSing like a mofo. But at least I'm sweet enough to make it for two.

I had a granola bar because the set is slowing down my work and I can't leave. I'm done with everything I need to do for the day except one thing that I have to wait on them for! Grrr. So yeah. Granola bar dinner for me... thank goodness I had some granola bars here in the office.

I made lentil soup with carrots and brown rice in vegan chicken broth. Tons of garlic, and some white wine and Tapatio in it. The broth didn't taste very good as I was simmering it, and I saw a mustard packet on the counter that our roommate had left, so I squeezed the mustard packet into the soup. OMG. It's fucking awesome. It's just enough mustard to give it a nice full zing. I think mustard is going to be my Secret Special Soup Seasoning from now on!

My grandma is making me Sinigang tonight, one of my favorite Filipino dishes. It's basically a sweet and sour soup that has tender beef chunks, pork, and chicken in it... all mixed with cabbage and a few types of filipino vegetables. All accompanied with steamed-white rice, of course. :yummy:

A slice of pizza and a bottle of fizzy Mexican fruit punch. (Which is 48576453847 times more delicious than most American soda, b/c it's made with actual sugar; no high-fructose corn syrup.)

I think I will make potato soup tomorrow....its one of the things I can make from scratch REALLY well. Its an old family recipe. It's REALLY good on cold days....but whatever...I have AC!! With a nice salad and some crusty bread...mmmmmm...And it will go well with the wine iseestars is supposed to bring over tomorrow when she comes to do my eyelash extensions!! Hopefully she likes soup and can stay for dinner!

Only way to go, especially with soup! I don't know what possessed me to put mustard in the soup, but it has this earthy tangy flavor. K didn't know it was mustard until I pointed it out, but he loved it. I bet the leftovers will be even better!
