Did a big swim workout tonight and had to grab something before work. I always go to Starbucks on the way and didn't want to stop anywhere else.
I enjoyed the Protein Plate from Starbucks along with my triple americano.
Whole wheat bagel, peanut butter, apple slices, grapes, cheddar cheese. I worked hard for 4.5 hours. I always bring a snack, but i didn't even eat it. Made the best maoney I have made all week.

Last night was Rosh Ha'Shanah dinner. Chicken baked in lemon-pepper, served over brown rice with blackberry-wine sauce. Oven-roasted corn on the cob. Baby spinach salad with toasted hazelnuts and pomegranate with a balsamic-and-red-wine vinaigrette. Homemade poppyseed challah with spiced apple butter. And for dessert, homemade apple honey cake with a honey-vanilla glaze. Oh, and a Spanish malbec for sippin'.
It was mighty damn fine if I may say so myself.
Yekhefah, that sounds delicious! you sound like quite the cook i'm jealous.

i got a crazy craving for caramel apple pie.
but then i decided to treat the hubby (not that he deserves it!) to chicken and dumplin's. he's been begging for it

Tonight I fixed a plate of steamed broccoli, with gluten free quinoa protien pasta, and garlic alfredo sauce made from skim milk. It was quality. :D

My sister and I made these today and they're sooo good :)
2½ cups oat meal or mixed grain cereal
¼ cup shredded coconut
½ cup raw sunflower seeds
¾ cup chopped nuts (not peanuts) or pistachios
25 drops brown stevia (optional)
¼ cup coconut oil
½ cup honey, agave nectar, or brown rice syrup
½ cup real maple syrup
½ teaspoon Himalayan salt
½ teaspoon cinnamon
1 teaspoon vanilla extract
Mix oats, shredded coconut, seeds and nuts, then set aside.
In a pan combine remaining ingredients. Heat and stir until well mix. Do not boil. Pour over oat mixture and stir to combine well. Pour granola into an edged baking pan. Bake at 300 F stirring every 10 minutes until lightly browned, about 20-30 minutes. Cool. Store in an airtight container.
Coconut Cream Bark
½ cup coconut flakes
½ cup Coconut Cream Concentrate
½ teaspoon vanilla
dash Himalayan salt
1/8 teaspoon pure stevia powder
Place Coconut Cream Concentrate jar in warm water to soften if needed. Mix the rest of the ingredients with the coconut cream and allow to set up in the refrigerator if you can wait!
Options:
Roll balls of this filling in the granola recipe above or add granola to the Coconut Cream Concentrate mixture. Cool and break apart.
Add 1 teaspoon cinnamon or 1/4 cup carob powder.
Add carob chips.
Add other flavorings such as cherry, almond, or maple.
