I think tonight I'll cook up some whole-wheat penne and saute it with olive oil, fresh minced garlic, a little crushed red pepper, and some baby spinach. Grate a little pecorino over it and call it a meal. K hates whole-wheat pasta but oh well, I love it!

He does really like the tri-colored stuff though.
A lot of times I'll just boil up two pastas, b/c I like whole wheat angel hair, and he likes tri-colored shapes ::)

Gonna try that Yumm sauce today, think I'll pair it with warm pita and veggies as a dip to accompany whatever else is in the BBQ we're going to.

he likes them on bagels. But if he had to have a bread sammie, I'd bet he'd want it crustless! He's very picky.

Ha...I make 2 separate pastas all the time. Mostly because I prefer spaghetti or angel hair and he like rigatoni or ziti.
Same with mac and cheese..I like the stuff with the packet of "real" cheese..he likes the orange powder stuff

Tonight was one of my new favs....
3 oz salmon w/olive oil, garlic, lemon, fresh dill, thyme, oregano, salt and pepper.
2/3 cup steamed asparagus with fresh squeezed lemon and salt and pepper
1/2 cup blueberries and raspberries
It was super fast to prepare, 30 minutes to cook, and walah! Dinner!

Tonight I was feeling lazy, so it was stir-fry night. I made some instant brown rice and stir-fried some tofu, cabbage, and garlic in sesame oil with balsamic vinegar, soy sauce, teriyaki, lime juice, honey, and sriracha. It was all right, cabbage was a little too crunchy but it was extremely filling. K really liked it.

I usually blanch the cabbage too, I was just too lazy this time. Oh well, it was still pretty good and K loved it crunchy. I love that I have a man who likes veggies and tofu but remains totally masculine. Never met a manly man who would dare to eat tofu until I met him!

Tonight I had my usual huge salad with sweet baby lettuces and organic romaine hearts, some marinated artichoke hearts, chick peas, tomatoes, olive oil, and a bit of caesar dressing. <3
Then, some chicken breasts with ketchup (Hey, I love ketchup!) and two pieces of whole grain bread with cashew butter. I r content! :D

I'm going to eat at work tonight, so I'll be having a grilled chicken breast with broccoli on the side. YUM! Later in the evening, I'll have a protein bar and energy drink to keep myself going.

they're amazing. soooo good. I had them at a resturant and decided I could do that too! lol.
I did, but it's just too hard for me anymore. :(

last night i made a pork roast in the crock pot with black beans i seasoned it with cumin, onion, beer and salt and pepper
it smelled so wonderful all day and tasted great!!!

sure! it is so easy.
I first made it up last night. it wasn't perfect, but i figured out a way to perfect it.
1 box frozen spinage
1/2 container marscapone
2 tbsp cream cheese
1 egg
1-2 tbsp breadcrumbs or parm cheese
2 pint sized bozes baby portabellas/ creminis
olive oil
salt and pepper
the oven should be set to 425
clean and de-stem the mushrooms. Slightly saute just the top of the caps in a little evoo, just long enough to brown them, on med/high. do not flip them to saute the filling side.
remove from stove and put on a plate, to let them cool.
defrost the spinach in the microwaver, (mine takes 3:30) then, dump it into a strainer and get as much of the liquid out as you can. Then put it in a towel and squeeze to get even more liquid out.
beat one egg with a fork or wisk in a medium sized bowl. Beat in marscapone and cream cheese till smooth. Make sure the spinach is cool enough. (you shuld be able to touch it with your fingers). And mix it into the cheese mixture. mix in fresh ground black pepper, to your tastes.
now for the shrooms. put them on a broiler pan with the caps down, and sprinkle the inside of each with the tiny-est bit of salt. Stuff each with the spinach cheese generously. sprinkle each with about a 4th tsp of the parm or bread crumbs.
bake till the cheese is firmed up, I think I cooked them around 8 minutes.
a yummy and healthier take on the stuffed mushrooms (although i must admit, these would be even better with breading and deepfried! }:D )

We're having the pork carnitas stuff from Trader Joe's in tacos, with rice and refrieds on the side. So good. ^That cheesy stuffed 'shrooms recipe sounds awesome, too.

Someone asked for my chicken recipe a few pages ago...all I did was throw some boneless thighs in a pan, seasoned them with herbs de provence, tossed in some portobello mushrooms, filled the pan about 3/4 of an inch deep with chicken stock, drizzled some EVOO on top, and popped them into a 350 degree oven for about 45 minutes. They were tender and delicious with just a little bit of crispy on top. It was a total BS recipe, I just had leftover mushrooms and chicken stock that needed to get used up so I did. And it worked.
I'm doing this, and serving it with warm spinach salad with ginger and sesime and soy, as well as whipped mashed potatoes with marcarpone cheese (I <3 that stuff!)
I'm getting to be really creative to get rob to eat better. I'm cool with fresh raw veggies, but he is picky. once i find a preperation he likes, I 'll make it till he's sick of it!

I made a warm spinach and shrimp salad.
I saute'd a bit of sweet yellow onion with some garlic, mushrooms and brocolli till the onions were softened and a little caramelized. then i added more olive oil and some chopped shrimp with a big bunch of fresh baby spinach, fresh grated ginger and a bit of soy sauce, till the shrimp was done and the spinach was wilted.

You can taste the vodka if you add a lot, but I only add about 2 oz. for 8 oz. of pasta.
And the recipe is super easy, I don't even measure anything!
Boil up some salted water. Cook up your favorite pasta. While it's cooking, cut up some tomatoes (I prefer grape or cherry tomatoes because they are sweeter) and chop up some fresh parsley. When the pasta is done, pour it into a collander to drain. Put the pot back on the stove on medium heat with 1 Tbs olive oil. Add some chopped garlic and the tomatoes. Give it a good stir, then toss in the vodka. When the tomatoes soften, it should only take a minute or so, turn the heat off and add the pasta. Add another tsp. of olive oil to make sure the pasta isn't sticky. Sprinkle on the parsley and some pepper... voila!
Boy and I are big eaters and can put away a whole box of pasta in one sitting. There's no measuring in this recipe, it's just about adding an amount that you're confortable with. If you don't like the taste of vodka, only add a shot's worth. If you love garlic, add a ton. It's a fun recipe you can play with! And if you use whole wheat pasta, it's healthier!
Oh sweet! Thanks for the recipe. I will be trying this tonight. What type of pasta do you usually use? Oh and have you ever had this with a side meat dish? I could do without the meat, but thought I'd ask. (Yes, I love my meat) :P
