We grilled. Boyfriend had HUGE hamburger and some hot dogs. I have veggie-bobs. Portabella mushroom chunks, zucchini, onion chunks, and chunks of tomatoes (Which where not half bad considering they are out of season) brushed with McCormick mesquite marinade. Nummy. Boyfriend even stole some of mine nad declared it fantastic.

2 lbs of london broil
4 lbs of mashed sweet potatoes
1.5 heads of broccoli sauteed with garlic

And this is what happens when you serve it to 3 hungry SWers and my boy!

Tonight was taco night. Ground beef for him, refried bean tacos for me. With homemade Spanish rice and fried mexicorn. Yum. I love taco night!!!

And now I'm sipping blueberry green tea and eating 2 Irish Potatoes. Yeah, I'm a piggy but it was good!

Collard greens and blackeye peas at my house tonight! If I'm really hungry when I get home and I feel like it, I'll make some cornbread sticks to go with it. Greens are already in the crockpot simmering away. This is my favorite meal! I'm such a grit sometimes. ;D

I had a deliciously huge salad sprinkled with lotsa tuna and balsamic vinegarette dressing, and some chicken noodle soup.

yek, how do you make your greens in the crockpot? I am so looking for an easy yummy greens recipe.

dinner tonight is chicken pasta bake :)

Wash and chop your greens (collard, turnip, mustard, or any combination of the three). Dump them wet into the crockpot and drizzle in a little olive oil or toasted sesame oil, a bit of soy sauce or tamari, about a half-teaspoon of sugar, some hot sauce, and a hefty dollop of cider vinegar or balsamic vinegar. Add just enough broth to come halfway to the top of the greens. Leave it on low for at least ten hours.

You HAVE to serve this with cornbread to soak up the pot liquor. The pot liquor is the best part!

I have never been able to make good cornbread.... :'(
But I love to buy it from the bakery! (don't tell anyone!)

We went to PF Changs and had fried crab wonton appetizer, giant prawns, and lemon scallops. I should have eaten more rice, I'm hungry again!

Oh Lola, I forgot, I added a little Liquid Smoke this time too. It's not necessary, but if you have it, put just a little bit in (like about a quarter teaspoon). It gives it a lovely smokey flavor. I also just tonight discovered dulse, which is a dried ground North Atlantic seaweed and it tastes just like salt pork but it's vegan and kosher!

Tonight I tried a new cornbread recipe and a recipe from my new veggie Southern cookbook. I sauteed some minced onion and cubed tofu in toasted sesame oil and soy sauce, and then when the tofu and onion were done I poured in the leftover cold greens and all the pot liquor, and added about a small handful's worth of dulse. It simmered on low until the cornbread was done, and the result was awesome. It tasted just like the old slow-cooked collards my great-grandmother used to cook with salt pork, only not greasy. Made a dark, heavy pot liquor that was great for soaking up in the cornbread! And the tofu was really good in it too.

i made salt pork last night first the first time, and i really hate it it made my house smell like chitlins, and made my greens too salty, i will always use hamocks from now on.
i made fried fish, and roasted potatoes, and hushpuppies too.

I'm telling you, man, if you can get dulse... all the flavor of salt pork, none of the stink, and if you don't go nuts with it then it won't be too salty. This is my new favorite seasoning for cooking greens!

yum! sounds good. I have never used liquid smoke, but I may pick it up, I've always wanted to play with it.

today's dinner is a sort of colcannon/corned beef and cabbage crossover. Happy St. Patricks day :D

I'm pondering Taco Night. MrsC got called into work, so I'm cooking agin. I was looting thru the kitchen for ideas for something different. I'm considering sauteeing some pork chops in Cream Of Onion soup, adding some broccoli and hash browns and maybe a little shredded cheese and making some sort of casserole I can throw in the oven. Sounds like it might be good, you never know.

I had a turkey sammich on healthnut bread with a spinach/tomatro salad. Honey-sesame dressing. I was still hungry. So I had some berry clusters cereal with almond milk. Still kind of hungry.

This boyfriend thing had me eating so well this past month, now my appetite has expanded and I'm getting fat!

A slice of whole grain bread, a couple of slices of deli turkey, and a tiny bit of mustard for flavor enhancement. And copious ammounts of water. And vitamin C.

If I crave a snack later, I have some vegan chili in the fridge. (Beans, tomatoes, soy crumbles, onion, a little bit of soy flour, and some spices. Iz goooood)

Scratch that. I'm preheating the oven for my Morning Star 'chicken' fingers. I thought they were vegan but then I read the ingredients. :( I'll probably still have angel hair though.
