Scrambled cheese eggs on an engligh muffin.

K made breakfast this morning... egg whites scrambled with garlic and fresh spinach, cooked in a little olive oil and topped with shredded havarti. It was pretty good!

1/2 C non-instant oatmeal made with water, added 1 scoop protein powder, 1 T natural peanut butter. 1/4 C milk after heated and yummers. This is usually my heaviest meal, as it is post workout and when I'm allowed "grain" like carbs

2 slices of gluten free bread (toasted), 2 eggs, 1 egg white (scrambled) and half a mango. oh, and a couple of tsp of jam on the toast. and black coffee (I loves me some black coffee...)

Wow. All these healthy, light breakfasts...whole grain toasts, egg whites, veggies, fiber, fruit. I'm such an oddball on this thread. I gots to have me something big, hearty, and meaty if I'm eating breakfast. Bacon, preferably, but ham or a big chunk of turkey works great. And I like my eggs WITH yolks, please. And salad is a Dinner Food, if at all. ;D

All that being said, I usually eat breakfast around noon nowadays so I may not be the best example for this thread anyway.

Some of the rice-oat-polenta bread I made a few days ago, topped with roasted garlic hummus and baby spinach. And of course, fresh ground coffee. I like this breakfast.

I'm thinking of killing the last of the eggs and making scrambled garlic egg whites, a blueberry bagel (need to switch to whole wheat) with light strawberry cream cheese, and I just finished a D'Anjou pear so there ya go!

I'm always very groggy in the morning so I can't possibly fathom cooking anything. This morning I had a bowl of cheerios-type cereal and a glass of almond milk. Usually I eat this every morning unless the boy gets up on the weekends early and makes his obscene french toast that takes like 3 hours to prepare and 8 to "marinate". Its amazing but we do that maybe every other month.

gah, all this yogurt! I must be the only one here who absolutely hates it. Well...I need a little bit of it to make my favorite berry smoothies, but I can't even think about eating it plain.

Breakfast today was pancakes with syrup and berries, and a glass of Orangina. Yes, today is my cheat day. :P

No breakfast for me today; I've decided to devote the morning to the monumental task of packing up everything I own for the move. I'll treat myself to something yummy when I'm all done.

I broke in my herb garden with breakfast this morning! I simmered organic polenta in vegetarian broth, then stirred in sun-dried tomatoes and fresh parsley and basil from my garden. Then I shredded asiago cheese over the top and mixed the cheese in. Took less than ten minutes and it's so good! I've always loved polenta for breakfast but with the sun-dried tomatoes and herbs, it takes polenta to a whole new level. :yummy:

I bought them. I'm growing grapette tomatoes but they haven't come in yet. There's a place near me that sells chopped sun-dried tomatoes in bulk for $1.50 an ounce, so I keep a bag on hand.

I love them too! When I found them that cheaply I almost wept. Look for a food co-op near you, the kind of place that sells herbs and spices in bulk. They might have some!

I used to, several years ago. Haven't in a long time. If you have a sunroom or a patio or anything, you can actually dry them in the sun; otherwise it's worth a hot day to dry them in the oven. Go to the farmer's market and get the freshest tomatoes you can. They're good!

Polenta. Slice off a couple inches of prepared polenta, microwave 1:30 until hot, add splash of veggie broth and grated pecorino cheese, mush it all up together and enjoy. Breakfast of champions. I've recently fallen in love with it!

I've had polenta sitting in my fridge and i've been clueless as to what to do with it.

zucchini with tabasco sauce and eggs. Seeing as I hate eggs, the zucchini and tabasco really hides the egg flavor and makes it really good. Yummy!

Great idea!

K made me breakfast this morning - an egg white scramble with turkey ham, garlic, purple baby garlic, and spinach, cooked in just a little olive oil. It was awesome.

I am really glad about this thread - I am trying to find more healthy breakfast options that don't include carbs and coffee (2 of my addictions) so I wrote down a lot of these yummy b-fast ideas to try out in the next week or two! Thanks ladies!!!

Hee hee!!! Well...maybe coffee...but not the PopTarts or Dunkin'Donuts lowfat blueberry muffin that I indulge in a little too much!
