I'm taking the Women's One a Day Multi...is that a good one?

You know what the best vitamins are? Prenatal ones. I know they are huge but they're really good for you and give you absolutely everything you need. The vegetarian ones seem to provide a good amount of B-12 and are without gelatin. They also say liquid vitamins absorb best.

Can you cook brown rice? That's really where a lot of recipes start. Remember, some carbs are okay as long as they are complex (whole grain) carbs.
Also I want to add that frozen veggies are often just as good if not better than fresh veggies and they're cheaper too. I read somewhere that they are always frozen at their freshest point, so you get the most nutrients. Get a veggie steamer basket (like $2 at Target or something) and you're all good.
Avoid the microwave too if you can, because it slightly changes the molecular composition of food making it less nutritious.
