I have tried 5 times recently to make crispy sweet potato fries and I ruined them every time so today I tried something else: plantains. I made tostones fried in lard and YUM. Next time I'll keep the heat a little lower and make them thinner.

My family fed me garbage as a kid but I was always very skinny despite subsisting off boxes of entenmann's donuts and ice cream sandwiches and happy meals. In high school my body started to change and I got an eating disorder...because my diet was so poor when I did eat I was sick and exhausted at just 15.
I experimented w veganism in college but when I broke up with a boyfriend it led to the same cycle of restricting, feeling like crap and then overloading on coffee and alcohol.
About two years ago at my thinnest (after a brief weekend cocaine habit) I was trying to get my life together and my doctor prescribed me an antidepressant for the first time in my life. I had avoided them after watching what they did to people but I was so desperate I tried it. It gave me a seizure after only two weeks of taking it (during which I felt nuts the whole time).
My body totally shut down...blood pressure plummeted, couldn't crap for weeks at a time, skin dried up. I thought I was gonna die. First I lost even more weight then I ballooned, developed bulimia...
It's been such a long process experimenting and finding what works for me and I'm still not done but blended foods w a lot of greens saved me and reset my system. I love kimberlysnyder.net/blog and the Ann wigmore philosophy. I try to alkalize and detox in the morning and be more intuitive w my later meals based on how I feel but gluten free, dairy free, food combining, and blended foods are the core guidelines I try to follow to stay well.
That being said I still let myself have things if I crave them (yesterday: papaya romaine smoothie for lunch, then a vegan burrito. Do I eat them regularly...no. But being dogmatic is just as bad as being too lax I think)
I'm 25...when things were really bad I was so angry about being sick and the meds that they gave me but it turned out to be a good thing because I learned how to take care of myself and I feel really good these days :D
Incredible story. Seriously, thank you for sharing.

Holy schnikes.... at first glance I thought you actually made fried lard! I was about to say....
Glad it's tostones, I guess the 'rican rubbed off on you a little bit..... have you had anymore bistec with sazon or adobo? :)
I bet a million dollars I see fried lard at the state fair this year!

I believe they had that at the Texas State Fair last year. Its sounds disgusting and instantly heart attack inducing.

Don't think I could, the melting point is so low! You know, for a while I was making adobo bistec so much that I got sick of it and just recently I started craving it again.
As for fried lard at state fairs, I saw fried butter once and turns out it was more like breading fried in butter, not an actual stick of fried butter. Omg now I want a good ole deep-fried oreo.
---------------------------------
Today I had:
• a cup of black coffee
• a 2 egg omelet with sauteed green beans and mushrooms, all cooked in butter
• tostones fried in ghee
• a coconut water
• a mango

Today I was a behemoth. I went to the movies so there was soda, popcorn, milk duds, nestle crunch, m&m's..... On the bright side though I got on my friend's scale and am over 10lbs lighter than the last time I got on it.

woooo dropped another pound! 134.5!!!
so far I've had scrambled eggs with broccoli, mushrooms, carrots, a little cheese, & roasted chipotle salsa. It was delicious and only around 250 calories but I need to figure out a way to cook the veggies before adding them to the eggs without involving oil.
200 calorie chocolate & almond shake
banana, blueberry, almond milk, spinach, & pineapple smoothie. OMG so delicious! roughly 300 calories
Broccoli and carrots can be steamed. If you have a shallow pot and a heavy lid it's easily done. As for the mushrooms, just chop them up and sautee them with your eggs.

Congrats BOTM!
I picked up a cheapo rice maker ("Aroma" is the brand name) from Target last week and it also works as a food steamer. You can steam veggies, fish, etc. It cooks the rice decently but I was reeeeally happy with how my broccoli and cauliflower turned out. You can sprinkle just a little bit of sea salt on them and they taste wonderful with zero oil. I'm gonna try out sweet potatoes tomorrow since it's the only food I microwave and it would be nice to not nuke 'em since I eat so many.
So far today I made banana soft serve (three frozen bananas in the food processor, add vanilla bean + cacao) and it tasted like a jack n the box milkshake.
Over the weekend I plan to experiment with less fruit (bananas, pineapple and watermelon especially are out) and more green juice, steamed veggies, seaweed, and rice. I love fruit but I feel I have better concentration when I keep it low glycemic.

I weighed myself this morning and literally gained 5 lbs overnight. Hell the fuck no. Must of been those brownies I baked yesterday.. I called my neighbor and told him it was an emergency and he needed to come take the whole pan away from the house. No more brownies :(
So far today:
1 soft boiled egg with a slice of wheat toast
kale smoothie with blueberries, acai pulp, and unsweetened coconut milk.
3 slices of light salami with 1/2 a slice of jalapeņo yogurt cheese.
I'm gonna try not to eat for the rest of the day and just juice some purple carrots, spinach, and apples. Maybe eat a chicken breast or have a protein shake after working out. Why must I love food so much??

I think I did pretty well today, at least in terms of calories and my unhealthy obsession with these frosted cookies I found.
Lunch - Egg salad sandwich
Dinner - ^^ same (when I find something I like, I eat it all the time until I'm sick of it, god knows why)
Snacks - 3 cookies throughout the day.
*sigh* Edited to add 3 more cookies and some jellybeans :(

This is one of my bi-annual 'vacations' back to the USA. I'm limited to 35 days max per year or I lose my 'foreign income' US tax exemption.
One of the 'necessaries' this trip is cooking Easter dinner for 20+ family members. And of course, I'm an 'old school' cook who has to sample everything while it's in the process. Between the turkey, the ham, the stuffing, the twice baked potatoes, the four different pies I baked last night, the wine / rum / irish whiskey used for 'flavoring' etc. I don't even want to think about stepping on a scale for at least another 2 weeks !!!
But on the 'healthy' side ( as if it matters compared to the rest of Easter dinner ), I made homemade zero butter rolls in a Zarayushi for the first time, all veggies are being 'steamed' in a double boiler, etc.

lol... I wouldn't say leak but when you have to go to the bathroom... it's a good idea you go immediatly or atleast that's what I experienced my first few weeks. Now that I have significantly limited my fat intake, I'm not experiencing the side effects to that extent :)
I looked at the first few weeks as a learning experience I guess.

Welcome! For iron, you should just give up on getting it through food and take iron pills (one every week or so). And always take them with food. :)

I would get vitamins with no iron and then buy a bottle of iron pills. That way you don't have to remember to eat before taking your regular vitamins...and then you can take your iron pills whenever you've eaten and you remember to take them (since they can make you queasy if you don't have food in your stomach).
Zinc is another one that's easy to be low on. I've been through both iron and zinc deficiencies. The former was a result of going raw for two years (I wasn't supplementing with vitamins) while I had a copper IUD (which make most women bleed a lot, and more often).

I have been making my own miso soup for awhile but I can never get the dashi to become really absorbed in the soup. It's too flaky...which is pretty yucky IMO. Do you have this problem?
I suppose I make a modified (read: American) version of miso. I just buy the containers of miso they have at the store (they come in white tubs, usually by the refrigerated drink section). I then mix it with vegetable broth and wakame (seaweed) in a bowl. While that's softening up, I heat a mixture of vege broth and water on the stove, and then dump the miso / seaweed mixture in when the broth gets hot. Stir n' serve. It's pretty damn good. You can add scallions and other ingredients, too.
