b: iced coffee with stevia and soymilk
1 bite of husbands sandwich
two handfuls of cereal
snack: half a piece of pita bread with red pepper hummus
lunch: grilled "cheeze" sandwich made with organic sprouted whole grain bread rice cheeze and a bit of earth balance
small orange
baby carrots with hummus
dinner: daiya, boca spicy chickun(the non gmo all natural kind) on a piece of pita bread
i did the math and ended up at around 1300 calories so i was still happy with that,
i try to aim for 1200 to 1600 calories a day.

Brunch:2x Poached eggs, spinach, mushrooms, tomato, 1 slice of sour dough toast & coffee.
Dinner: Thai Larb Salad (beef) rice & an ice tea
Snacks: Blueberries, few corn chips.

I eat terribly Thursday through Saturday because I'm so busy.
Yesterday:
Two scrambled eggs with dill relish and a bit of mayo for breakfast.
Tuna sandwich for lunch.
Subway turkey and ham with cheese, lettuce, tomato, mayo and salt&pepper for supper.
Today:
Nothing yet, but I'm making some beef curry that's been stewing for two hours that includes potatoes, onions, green beans, peas and diced carrots.
For beverages I don't drink anything except water.
I have a hard time eating over 1000 calories on my busy days. I try to keep it around 1500 on my off days. It's hard for me to think of "on the go" or portable food since I won't eat anything processed (including protein bars etc) and am deathly allergic to coconut... which is now in fucking everything.

Split pea soup in the afternoon
Been grazing on Lox & raw tomatoes w/ garlic salt & pepper on & off during the rest of the day so far. A few handfuls of chipins here & there. One can of gingerale

I seriously did just stuff my face. Mexican food, specifically, sope de carnitas, taco de chicharron, caldo de res and a coke. Dericous!

Breakfast: Greek yogurt and a banana.
Lunch: Tuna sandwich with only one slice of bread + French onion sun chips.
Dinner: Salad with spinach leaves, and carrots on top with light Italian dressing. Baked cod.
All day: Lots and lots of water.

I only woke up a few hours ago so some coffee. But yesterday I went to the Cheesecake Factory and had some chicken that was covered in bread crumbs and a slice of the 30th Anniversary Cheesecake. I actually only ate that one meal yesterday....I'm wondering what the heck I did for the rest of the day because I don't remember being hungry at any point in it...

l:my husband and i went to ruby tuesdays: guacamole and blue corn chips
a small side order of spaghetti squash with some salsa mixed in. (yummmm) ive been a spaghetti squash maniac as of late.
medium peppermint mocha latte with soy a shot of espresso and no whip.
tomorrow im gonna bake my own spaghetti squash and put portabello mushrooms in it with some high quality wine-marinara sauce omnomz

Breakfast:
Cereal:
Recipe: Mix muesli, dried cranberries, pumpkin/sunflower seeds in a bowl and top with freshly squeezed orange juice instead of milk (it's light, sweet and full of energy and fiber)
Lunch: Caprese Salad (with baby bocconcini instead of mozzarella)
Recipe: Cut up fresh tomatoes, add baby bocconcini cheese & fresh basil leaves. Drizzle with Olive oil or dressing of choice, add cracked pepper & serve.
Dinner: Grilled Chicken breast in a Thai style marinate with steamed baby broccoli.
The marinate:
Lemon grass, lemon juice, ginger, fresh coriander, fresh chilly, dash of vinegar and water (pour some of the remainder over the veggies for extra flavor).

Coffee and buffalo wings

Today I cooked collard greens! Fry some chicken or turkey bacon, onions, and garlic, add chopped collard greens and some water, salt, pepper, crushed red pepper, simmer for about an hour. Amazing and soooo filling!

Venom is an energy drink. It doesn't give me energy but I have one every once in awhile b/c I don't drink soda anymore and it tastes AWESOME. It is probably terrible for me too.
I had an appointment on the North side of town, so I stopped at this Jewish restaurant.... I had a piece of cheesecake, but non-dairy, they make it with tofu! I really want to find a recipe for it, it's lighter and not as sweet as cheesecake, and tofu has protein!
I has Moussaka, dolmas, and the best hummus I've ever tasted in my life!

How do you make scrambled tofu? I have never bought tofu ever.....
I fry onions, chopped bell peppers, and anything else I want, in margarine, add vegetable stock (not too much) add tofu, press down so it begins to resemble the same texture of scrambled chicken's period I mean egg add colouring or tumeric if an egg-like look is needed...Season, serve :)

Argh. This weekend was BAD! I finished work at 330 am on Friday night/Saturday morning, had a gathering at mine got absolutely wasted ..Ate a salsa and fried mushroom wrap, went to bed..Saturday was too hungover to do much, can't remember what I ate...Think it involved salsa and crisps and popadums...
Yesterday ate some tofu stir fry ahome made pizza after the pub.Healthy!
Giving my body a break today. Salad and low calorie soup is all's gone in it!

Breakfast- Oatmeal.
Lunch- Salad with carrots, spinach, shredded cheese and light Italian dressing + a scoop of mashed potatoes.
Snack- An individual sized bag of baked Lays chips.
Dinner- Half a roast beef sandwich. A banana.
+ A ton of water as usual.

b: 2 handfuls of raw organic cashews, organic strawberries and a dirty chai latte with soy
l: a few bites of a vegan burrito bowl at chipotle consisting of black beans white rice salsa and guacamole for some reason i got a really weird surge of nausea and couldnt eat it most of it.. it was so weird cause the nausea went away after 15 minutes but it was really intense like i was going to get sick.
d: stomach felt fine so i had tandoori nann with roasted garlic hummus and grilled "chickun" also organic baby carrots with more of the hummus
also had half a serving of trader joes cherry soy creamy and a bite of my husband endangered species blueberry dark chocolate
lots of water throughout.. i ate what seems like a lot today but i felt good about today everything was small servings and pretty healthy.

How do you make scrambled tofu? I have never bought tofu ever.....
I fry some onions and mushrooms, I like them pretty well done, then crumble firm tofu into the pan, keeping it in quite big bits, add some Marmite, salt, pepper, let it cook till it starts to catch and gets crispy edges. I sometimes add curly kale too. It's one of my favourite things to eat, I never tire of it. Here it is on toast

I'm starting off the day with a big glass of beet/banana/fig/ice/ginger/pineapple/apple smoothie:
1 huge organic beet
probably 3-4 bananas
3 figs
ice
small ginger cuttings
half a pineapple
an apple
I made a blenderful last night and had it before bed (along with three cookies of raw cookie dough so I wasn't exactly being an angel) and put aside another blenderful to juice with more bananas and ice in the morning. I'm really digging on the fig (bought them dry and put them in a bowl of water in the fridge to plump up, like you do with almonds) which has little seeds that are fun to pop with my teeth like strawberry seeds, but a little smaller and more fragile.
I feel like having a juicer and blender makes me eat less bad overall, but I'm still working towards correcting some of the pounds gained in the past month from grilled cheese sandwiches and pizza :P

lunch: single serving vegan mac and "cheese" baby carrots with one serving pine nut hummus
dinner: two organic blue corn mini taco shells filled with soy protein and nutrititonal yeast sauce, a serving of chips with nutritional yeast queso
later i had half a serving of cherry soy cream with a bit of organic pumpkin :Dgranola sprinkled on top
probably a bad day but i feel like it was ok..
