Not to overshare too much - But for the last couple of weeks I've been taking a shot of 1 tbsp chia seeds in 4 oz of full fat milk kefir (has to sit for 10 minutes before taking it) every morning about an hour before my first meal, and I have NEVER been more regular in my life. Plus the "food baby" bloating that I often get after eating is no longer an issue. For anyone who has problems with that kind of stuff (I've struggled on and off most of my life with IBS), this has been my magic cure!

Yesterday between classes I had this amazing "Southwest Detroiter" salad! It had mixed greens, avacado, blackbeans, corn, pico de gallo, scallions, tortilla strips, and pepperjack cheese with a southwest ranch dressing. Very tasty!

summerbre: oh, it's so easy! take an egg or 2, some rice flour, scallions, some kimchi, stir it with a fork and fry it with a lil sesame oil. bam.

i've also been really into making asian coleslaw burgers, doing basically the same thing but using the egg only as a binder instead of a main thang.

Since I work nights, I usually have a big meal before heading to work and then another meal when I return. So..

-3 egg omelette with tomatoes, mushrooms, and lots of cheese. An apple and lots of water.
-At work: strawberries, grapes, a big thermos of tea. And lots of beer because customers know what I like (I gotta change to virgin drinks or soda though, beer has too many calories!)
-baked salmon on kale, tomatoes, feta cheese, and avocado.

I recently decided to change to a healthier diet and I do feel so much better. It takes a little more time to prepare but it's cheaper and much better.

I'm going to use this thread to keep myself accountable! I'm sick of slipping up with my eating. My goal is to be ultra healthy and have a mega immune system come winter.

Today:
- Single egg omelet w/ orange pepper, broccoli, cilantro & tabasco sauce
- Whole avocado & flaked tuna
- Handful of raw almonds & a handful of wholewheat, low sodium crackers
- Atlantic salmon fillet w/ peri peri sauce
- 2 cups black coffee
- 2 cups oolong peach tea
- a couple of glasses of wine

I've been really into green smoothies these days. It's so crazy how you can't even taste the greens! Drinking them lowers my cravings for unhealthy foods.

-one apple, cored
-two bananas
-two large handfuls of fresh, organic spinach
-water

Use food processor to pulverize the fruit and spinach. Once the spinach has been fully integrated with the fruit, slowly pour water in to desired consistency.

slice of bread with almond butter, a cup of plain kefir and an apple

Am I the only person here that typically swaps lunch and dinner meals? I have my biggest meal in the middle of the day, and then have small lunch-type snacks periodically for the rest of the day. I think it's because I don't like eating too much right before work.

Yummy breakfast shake with:
Avocado
Almond Milk
Dairy-Free Kefir
Tiny bit of honey
Cinnamon
Chia Seeds

A handful of cherries

Baked chicken, dredged in dairy free kefir/garlic/onion/thyme/oregano & finely crushed walnuts with a lightly EVOO/lemon juice dressed romaine and tomato salad.

I had a bottle of kefir about to expire, lol

I just got my spiral slicer today so I'm excited to make some zucchini noodles tomorrow!

I'm getting really into sweet potatoes. I heat them in the microwave for 7 minutes and add olive oil, salt, and pepper. Voila! Super satisfying and extremely healthy. Adding fat to them (olive oil) is important - otherwise the vitamins don't get absorbed nearly as well.
