fresh spinach salad, sardines in olive oil, quinoa, and..yes an ice cream cone. i slipped..but i figure i didn't eat ice cream for 3 or 4 days, i deserve a treat

Instead of getting an ice cream cone, get the single serving Haagen Dasz or whatever bran you prefer in the grocery store. It's the perfect treat amount.

Since my mother in law is back, she's been feeding me lots of delicious Filipino food! For breakfast she made me eat suma (warm, semi sweet rice pudding stuff). For lunch nigalang baka soup made with Chinese cabbage, tomato, rice and fish on the side. Delicious! For dinner I had a chopped salad with small sesame seed muffin. Today she's making beef adobo. I'm in heaven.

So far when the bf comes over, we get hungry, we get fast food and ruin my diet. If I don't cook something healthy we aren't eating healthy. So today I made spaghetti squash, ground turkey in Prego spaghetti sauce and spinach salad with Cranberry Balsamic Vinaigrette dressing. Yum!!!

Drained and rinsed canned sardines, mashed onto a brown-rice cake with salt, olive oil, lemon juice, red onion, and capers. SOOO satisfying!

Sardines are extreeeemely healthy and very sustainable. They have a reputation for being gross, but they're fairly mild in flavor (like canned tuna), and you don't notice the bones at all (they're soft). Super low in mercury and other toxins since they're low on the food chain. Great sources of omega 3 fatty acids, calcium, iron, and vitamin d (among other things). A fantastic lean protein option. Costco sells them in bulk!

I made a sweet potato puree today that was pretty ridiculously good. Sauté onions and garlic, set aside. Chop up whole, unpeeled, raw sweet potatoes (I used three medium taters). Toss in olive oil and throw into same pan (I used a large frying pan) used for aromatics. Cover, stirring occasionally, until cooked. Stir in onion mixture with salt, rosemary, thyme. Puree in food processor with a creamy element (I used a bit of coconut cream). Serve with preferred topping of choice. A dab of Greek yogurt, a small pat of butter, a drizzle of maple syrup...

Recipe only sounds complicated because I explained everything thoroughly. I'm not a patient cook.

I thought the puree would taste like baby food due to the texture, but sweet potatoes work surprisingly well prepared this way. They taste like a comfort food!

Shot of espresso, two hard boiled eggs mixed with avacado, salmon and a little cream cheese on a pita.

Then I was feeling a little traumatized tonight after being basically assaulted at work and had flaming hot Cheetos with Nacho sauce. Damn comfort food :(

I worked a 10hr Vanilla shift so I packed food-

Breakfast:
Apple
Almond Coconut Kind bar (would have preferred one w/ more protein but bf ate the rest)

Lunch:
Vegetable Masala with Steamed Broccoli and Red Cabbage and Rice (with some cream cheese chunks to imitate paneer)

Dinner:
Grapes
Feta (2oz hunk)
Kashi Crackers

Snacks: V8, and Black Tea with cream and sugar.

Gosh carbs get you to 1500 kcals fast. Oh well- I'll make real meals on Wednesday when I have the morning free. New household strategy is to make healthy tasty meals for the week rather than spending $1,400/ month eating out.

Salad: Romaine Lettuce with bits of Cilantro (I loveeeeee flavor), half of reduced fat sargento pepper jack cheese slice, a sprinkle of raw onion, and ranch dressing.
Half of a hillshire farm stuffed chicken breast (I think it was a bit of bread and sausage mix?)
Small pan seared talapia with a bit of hidden valley fiesta ranch dip seasoning.
Bottle of Nestle Purelife Water.

Cafe au lait, green tea, 4oz seared ahi with spring mix (I love leftovers for breakfast, what can I say?)

Fudge stripe cookie with salted caramel

Slice of sourdough bread with hummus and sumac, lemonade

Vanilla apricot tea with soy milk

Also, yesterday I made super scrumptious fake pavlovas. I put honey greek yogurt in a ramekin with a vanilla meringue from Trader Joe's and blackberries on top. So amazingly indulgent but not actually very bad for you! The meringues are obviously very sugary but they're only around 20 calories each, so the entire dessert is definitely less than 200 calories depending on how much greek yogurt you add.
