I'm not sure what I'll eat for dinner. Maybe a leftover caesar salad in my fridge.

The past week or so, I've been focusing on re-committing myself to eating vegetarian after tasting too many things from my boyfriend's dinner plates for too long. I really just want to be nice to myself and eat food that I can feel good about consuming instead of this terrible cycle of "indulging" on things that I don't even truly enjoy and then feeling absolutely awful about it.

And, happily, I can say that I feel so much better in my skin already! Of course the stripper part of me is stoked about looking better, too. Crazy how we all know that eating fruits and veggies and drinking tons of water will make you feel awesome and look super hot, yet it's still so difficult to just do it. So simple and yet so hard!

Large mixed greens salad, ranch dressing, a dash of cheese, croutons, and onions, and a small slice of pizza.
For dinner I'll do grilled chicken breast with steamed broccoli.

Jamie Oliver never does me wrong. All his recipes are healthy, easy to prepare and delicious as hell. I highly recommend his website. My husband goes nuts for anything I've ever made off of there.

Coconut cream creme Brulee

4 large egg yolk
1/4 cup coconut sugar (organic and unrefined)
1 tbs coco sugar
400ml coconut cream (ayam brand if possible)
fresh tart fruit of choice (passionfruit; the seeds may be unpleasant texture, rasberries, pineapple, apricot) to serve (macerate it a little)

1) Oven preheat 140 Celsius. Boil water in kettle. Arrange 4 small (125ml capacity) ramekins in a lrg baking dish.
2) In bowl, mix yolks and 1/4 cup sugar until pale and frothy. Add coco cream and whisk till smooth. transfer mixture to 4 ramekins. Pour boiled water into baking dish to reach halfway up side of ramekins. into oven approx 30-40 mins until custard is just set.
3) Allow ramekins to cool to room temp on bench (remove from baking dish). Sprinkle tbs measure of sugar (or a little more :)) evenly over surface of each ramekin. Caramelise under a hot grill (watch it carefully) or using a blowtorch. Set aside for 5min until sugar hardens. Serve with fruit.

I'm not, I use coconut oil/cream/milk for everything, but I don't have coconut sugar at home.

I have wanted to try it though so will get some soon.

Pre breakfast- Nu-cell powdered collagen with water and a splash of OJ well blended
Mug yogi blueberry slim green tea w/ lemon

Wait 20 mins for collagen drink to absorb

Blueberry Pie smoothie - 1 small banana, 1/2 cup frozen blue berries, 2 tablespoons flax seed, 2 tablespoons brown rice protein, 2 tablespoons almond meal, one pinch of the following:cardamom, cinnamon, nutmeg, vanilla powder, and one cup unsweetened almond milk w/ a few drops stevia......OMG SO EFFIN GOOD. Like dessert for breakfast. I find if I get my sweet fix early in the day I won't crave it later. Yummmmmm

Veggie Salad - Mixed greens, 1/2 cup edamame, 1 cup roasted cauliflower with olive oil/garlic/ms dash, 1/4 sliced yellow pepper, 1/3 cup cherry tomatoes, 5 olives, dressing a mix of coconut vinegar/flax oil/dijon mustard and topped with hemp seeds

Dinner - Quinoa/veggie soup with cabbage, shitakes, kale, onion/garlic, fennel, other leftover veggies I had can't remember. It's pretty boring but I might go meet a friend over a glass of wine and an appetizer so we will see

Vegetable Thai green curry of carrots, onions, celery, mangetout, leeks and kale with jasmine rice.
Herb teas and water.

My coconut crime brulees didn't set properly yesterday, I think because I realised I'd used medium sized eggs, duh. Still tasted delish though!

I blew my diet today. I had a small chili from Wendy's with onions, cheese and 2 crushed up crackers. To top it off I had a small coke with lots of ice to dilute it a little. I don't really like diet sodas. (if anyone knows of a good diet soda let me know) I'll have to go another 45 minutes on the elliptical machine to punish myself.

This is going to sound really dweeby, but I had my coffee this morning with coconut water instead of milk. I'm a die-hard cafe au lait girl, but substituting with coconut water was actually pretty yummy and I think I'll keep doing that from now on.

I thought I'd share in case anyone else is trying to cut dairy from their diet and hates soymilk.

Alpro brand coconut milk is a good replacement for milk. Their almond and hazelnut ones too, especially the hazelnut in coffee or hot chocolate.

(Depending on your location, not sure where Alpro is stocked)

^ My mom does coconut milk and almond milk but whenever I've tried those in coffee it tastes weird to me. Something about the acidity just doesn't feel right, but I think she gets Silk brand? I'll have to try these if I can find them, though.

1 large grapefruit, 1 orange, fresh pineapple spears, some white cheddar popcorn. A 12" thin crust pizza w/light cheese, black olives, & mushrooms. Some Trader Joe's brand dark chocolate covered marshmallows.
Water & diet Coke. Very..unhealthy. :(

I had chicken fried rice for dinner. I made myself stop eating, so I'm saving half for lunch tomorrow. It's so good, but it must have a lot of salt because I'm on my fifth bottle of water and I'm still thirsty.
