Open faced tuna melt for breakfast with extra sharp cheddar and avocado
3/4c homemade jambalaya with organic sausage
1c milk
handful blueberries
1/2c haagen-dazs, but every time I eat treats I sit next to my husband and feed him every other bite so I only eat half. ;)

And yeah, I really do measure my food.

How is the Bulletproof coffee working for you? More energy, more focus?

Today I had like 3 cups of coffee, a bowl of chocolate granola cereal mixed with raisin bran w/ soy milk, some sunflower seeds, a piece of toast with peanut butter & cinnamon, and a banana. Right now, seasoned potato wedges are in the oven. :)

Eating before work is always so difficult. I don't want to pick anything that could possibly give me any bloating / gas...so I avoid things I'd normally use as snacks (cottage cheese, nut mixes, oatmeal, beans & rice). I've just been having a piece of whole-grain bread before work lately, which seems a bit weird, but it's a safe choice, and the carbs are good for energy...

Charlie - what do you eat your sardines with? I know they're soooo good for you, but I'm hesitating because of the fishy taste. If I had a really great recipe, I might be tempted to try it: those sardines in water look really good!

Re: sardines, I know you didn't ask me but I eat them all the time and can't stand the fishy taste too... putting sardines in a bowl, mashing them with a fork, and then mixing them with a big spoonful of good quality brown mustard and some chopped green onions (optional) is SO good.

I love sardines!!! I don't find them fishy though. They taste about the same to me as canned tuna.

I drain them, rinse them, and mash them onto rice cakes. Then I salt them and drizzle them generously with lemon juice and olive oil. For stronger flavors, top with capers and red onions. Pretend you're eating canned tuna and don't make eye contact with the bones (they're very soft and you won't notice them at all, plus, they'll give you calcium!!!).

That actually sounds like it might be good! Will have to try it with the lemon juice and oil, or even some brown mustard. Some people say it can be a bit of an acquired taste, but it's so good for you that it might be worth it. Now, if I can just get past the little tiny heads...

I don't know if it's different where you live, but in the US, I've never seen canned sardines that still had the heads or tails, and they've all been gutted as well. Really, the ones in the link provided are just as mild as canned tuna. The only adjustment for me was learning to ignore the bones (but they're just as soft as the meat).

JudyO

Honestly, I *am* in the US, but the last time I was offered sardines they had the heads on. Explains why I didn't want to eat them! Will definitely have to try the ones you suggested -- they look like they're really good!

Sometimes I just eat a can of refried pinto beans for dinner. I add salt, cumin, cayenne, chopped garlic, and a bit of water. Heat for 3 minutes, mix in lemon juice, and top with greek yogurt, feta cheese, cilantro, salsa, chopped tomatoes, or whatever else I feel inspired to add.

It's cheap, easy, healthy, filling, comforting, and endlessly versatile depending on what you have on hand. You can get fancy and add rice on top, fresh lettuce /spinach leaves, etc.

Having an acid component (lemon juice) is critical, and the cumin makes a big difference as well. :)

Did you end up trying this?

I've altered my recipe. I make it on the stove now, which doesn't take very long and is well worth the effort. Sautee some chopped garlic in olive oil, add the can of refried beans, add some water / broth to smooth it out, add cumin, cayenne, a dash of cinnamon, and salt. Stir until smooth. Top with Greek yogurt.
