any ideas for family meals that doesn't mess up the kitchen and that are quick?

Soups are always good if you want easy, especially considering they normally don't require a TON of babysitting and they're easy to make a ton of. crockpot recipes are also your friend, as you can just plop everything in the cooker, go about your day, and have an awesome dinner ready when the evening rolls around. Here are 5 super easy recipes I've tried and enjoyed. I'll add notes to every recipe with any changes I've made to better it.

(I left the bacon in and used sodium free chick broth. Also, you don't need to use a dutch oven, as a large nonstick soup pot works just as well).

(Hella easy and always a crowd fav. I add a can of cream of mushroom soup to it for creaminess).

(add a can of hominy if you want, but otherwise this is amazingly good as is with some lime juice, cheese, and cilantro on top).

(I've used both bow tie and penne before, but the former turned out much better imo. also adding half a red bell pepper in with the broccoli makes is super bomb. it's a 30 minute meal which is nice).

(I like making a couple of these when I know I'll be working a lot because its so freaking easy and can be eaten cold or hot. Add some fresh ground pepper and a bit of garlic powder to the mix before you bake it. it's an easy recipe to add to (some chopped up mushrooms, sun dried tomatoes, or a large hand full of fresh spinach make bomb additions)).

I've been trying a bunch of new recipes and thought I'd share some easy to make quickly & easy to make ahead recipes.

Snacks:
Italian orzo salad https://www.budgetbytes.com/italian-orzo-salad/
Super duper easy to make, vegan, and keeps in your fridge for a few days! Instead of using the dressing recipe provided (which is good but kind of one note), opt for your favorite bottled Italian dressing. Make sure you wash the beans well! I also substituted in sun dried tomatoes for the grape tomatoes but both are good. if you aren't vegan, finish with some Parmesan cheese.

Dinner:

It's a 30 minute meal that doesn't mess up your kitchen (yay)! The recipe is pretty solid and doesn't really require much tweaking. my only tip is to follow the instructions on the sour cream step very carefully to prevent curdling.

Super easy one pot chicken quinoa skillet https://www.aspicyperspective.com/chicken-broccoli-quinoa-skillet/
Takes 30 minutes to make, reheats well, and it's packed with protein! Pro tip: Rinse the quinoa for a couple minutes (it cuts the bitterness) & add some garlic powder to the chicken for maximum wow factor.

The hardest part about preparing this dish is letting it boil. It reheats super well, provides a few meals worth of food, and can be simplified further. Personally love serving with brown rice, as it keeps well and adds a nice flavor. Fair warning, this will be a crowd pleaser and will disappear fast in any household.
A couple notes on this one for ease:
be sure to cut the figs in half before putting them in the sauce (it really ties the dish together nicely when everything is bite sized).
Unless you have a grill pan, completely disregard the last step. Just pan fry the sausages then cut them into rounds. so much easier and makes for convenient storage.

I know you said you don't cook, but what about something like instant rice? You just boil the water, but a equal amount or rice in as the boiled water, then let the rice sit with a pan lid on it for like 10 minutes. You can then add things like cheese, tuna, vegetables things like that on top and warm up in a microwave. quick and easy. My clients used to loved to watch me cook stuff up and eat it.

I have a microwave in my bedroom at my parents hahahahahaha that bitch is handy af! I eat half the food my mom cooked for dinner after I wake up, put the rest into the fridge, then take it out to eat the rest too. Or I use a tuperware that is meant to be put into the microwave and put a few eggs inside, close it tightly. Same with cream spinach (in frozen cubes, easy to defrost, cook and eat without too much noise). Yummy vegetarian menu!!

TRADER JOES. I'm single and loooove their pre-made food and salads! Pop them in the over for 30 mins and perfect! I love their turkey meatloaf, chicken pot pie, chicken and rosemary, and all of their salads.

Every week I get free eggs and veggies because I work part time on a small farm. I'm vegetarian and gluten free and try to have my meals be low carb, but my snacks can include carbs. I make a lot of things with eggs and marinated tempeh bacon to make sure I'm getting enough protein.

My go to snacks/meals to prep in advance for cam include:

deviled eggs (many variations)
antipasto (pickled veggies from the farm)
chopped salads (I just keep the lettuce leaves separate from the rest of the ingredients to avoid wilting)
crockpot chili
crockpot soups (an immersion blender makes soups in a crockpot so easy, you barely have to chop veggies)
vegetable and tempeh parmesan (ends up being like lasagna but without the pasta part, I eat it w/ salad and antipasto)
enchiladas (I make enchiladas in a layered lasagna style rather than filling each individual tortilla, saves time and you can fit more in a pan)
quiche variations
cheese and hummus plates w/ rice crackers, apples, and antipasto, tempeh bacon
simple bean tacos with escabeche (Mexican pickled veggies), salsa, and avocado
greek yogurt with honey or thawed frozen berries from summer

About to go make some tzatziki sauce and eat it tomorrow with salad greens, shredded carrot, cabbage, and onion, roasted beets, tempeh, and chickpeas.

Another thing, I try to eat salad or just salad greens with every meal to help with bloating and inflammation. I get tired of eating salad every day but adding fresh herbs like dill, oregano, or cilantro (depending on what goes with the meal) really helps me to actually want to eat the greens.

^^ I love veggies and cant get enough of them! This time of year I always just chop up whatever veggies I have and throw it in a pot with water, I dont use stock unless i make my own cause I have be low sodium, I add a can or two or chopped tomatoes and then one box of tomato puree and just let it all boil. I love it cause I can rough chop everything, I dont blend it cause I love the chunky texture and it will last for like 5 days in the fridge so every day I have soup and a sandwich or soup and I add in chicken or soup and some other side of protein to it, Easy, hot in the cold weather, and half my meal is cooked every day, I do this like every second week in the winter

The rest of the time I do stir fry or some rice mix with a protein and tons of veg. I cant get enough veg! I think Im going to start having it delivered to my door from one of those farm to table services cause I never met a veg I didnt like (except brussel sprouts those evil little balls of gross!)

^^ if you’re ever in the market, a company called herb ox makes sodium free bouillon. My friends husband swears by the stuff (he has heart issues and has to be low sodium as well).

Easy things I love
-Amy's burritos (I buy a huge box at costco).
-hummus!! Like seriously, buy a big thing of hummus, a bunch of chopped veggies, and you are good.
-Soft boiled eggs, toast (Daves killer bread), coffee.
-Apples slices and pieces of sharp cheddar.
-Avocado toast with Chulula( sp) hot sauce.
-Those little Cilantro chicken pot stickers from TJ's.

I've started baking a big pan of brown rice (then freezing in portions) and making individual size foil packet servings of veggies with whatever protein and seasonings inside the packet, usually in 1" pieces. there's variety of flavor and the combos are endless. the brown rice bakes in an hour and the last 20-30 minutes, throw in the foil packet! I like to make a bunch of foil packets at once so they're ready to throw in the oven and can cook while the brown rice reheats.

I do 1.5c raw brown basmati rice, 20oz stock (whichever flavor I'm feeling, whether chicken, mushroom, tomato, etc), seal tightly and let bake for 60 minutes at 400...makes 6 half cup servings for me, and then 300g of veg with 6oz protein mixed with a bit of olive oil and whatever seasonings in each foil packet. I bake these at 400 for 20-30 minutes when i'm ready to eat.

Was having coffee with a galpal, who was touting about her love of crock pots.
She gave me a link for 365 Recipes.
On the way home, I stopped at a thrift store, and found one for $8. Pictured.
I didn't realize until I got home that it didn't have a dial.
A quick Google search, and I found out how to use it.
Ironically, 2 days after I bought it, I was invited to a party, where all the food was prepared in crock pots.

The chicken, rice, veggies were beyond delicious!
My Crock-Pot is too small to cook a lot of food at once.
But, I did make a medly of veggies that were out of this world!
Carrots, small potatoes ( cut up), onions, garlic, celery, in broth. Yummers!
Served that with chicken thighs, baked.
The other day I put in a bunch of red potatoes, olive oil, butter, thyme. Let it cook for 4 hours. OMG! The best!
Before I buy a bigger pot, I'm going to a friend's house to check out his air fryer.
Does anyone use them?
Both are perfect for cam girls, imo.
Food is cooking, while we're camming. No fuss, no muss.51497

Side note: Said friend treated me to dinner last night.
She chose a Peruvian restaurant, that she nor I had ever been to. Their specialty was chicken and rice.
It sucked so hard, and today I woke up with indigestion.

Went there last wk, bought roomie a coffeemaker. Some lady bought most of the sweet potato ones. :( Pattie LaBelle brand

I have a mini (Asian type) crock, it says for rice & so much more. So I guess a rice cooker that cooks other stuff? Never used it, only 14.00 from Nord. rack.

I also keep premade smoothies in the fridge from the grocery store (I like the brand Koia if your grocery store has it) or I have protein powder to mix a quick shake. It’s easy to grab and have while on cam

ETA* if you like pistachios have you tried the bbq or chili ones by the brand “wonderful” omg they are soooo good

U know what, there's a brand from health store, Fruitful Yield, they have flavored/regular pumpkin & other nuts, seeds they're super good.
I don't go in there a lot, kinda pricey..

They have dark chocolate coconut squares too that are yummy, they are individually wrapped, in a blue bag

kind bars
avocado toast
mini "charcuterie" plate - salami or deli meat, grapes or sliced apples, pickles, nuts, cheese

i find all of these relatively satiating and easy to eat within the ten minute break/pause button period on SM. if i log off to eat, i almost always find an excuse not to log back on, so super quick snacks are the way to go for me.

i cam in the evening/night time so i like to have a filling healthy dinner like sheet pan roasted veggies & chicken with rice, then i am able to work for 3-4 hours before needing a quick snack break. post-snack i get another hour or two in. after i log off for the night i have a small meal like a bowl of wonton/miso soup, a quesadilla, or a bowl of cereal. nothing too filling but enough to curb any munchies/hunger before bed.

EXACTLY! Eating is super distracting and gets me out of hustle mode easily. When I used to work nights, I'd always have to eat before I worked. Now I work days, I drink my calories (protein shake, naked juices, coffee, a can of coca cola.) Twice this week I logged off to just heat up soup and the whole process of making food and sitting down to eat it took me completely out of the headspace of working.

Pineapple chunks. Talk about an energy boost! Good for you, and they're absolutely delicious. I'm thinking tomorrow I may take the bus to get some more, and maybe some clementine oranges or navel oranges.

Wellsley Farms chewy chocolate chip granola bars (60 in a box). I'm a person who HAS to be snacking on something every few hours. I don't know how other people can go 6 hours or longer not eating anything at all. If I go that long without snacking on something, I feel like I'll pass out.

Oats - I buy the pots that you just add water into and add mixed spice seasoning, add berries on top - fast easy breakfast.

Eggs and spinach. I just wash and put spinach in a pan let it cook a little then break two eggs in lol I like this for quick lunch. Add feta cheese and its yum.

Cous cous, harrisa and vegetables. I just put the cous cous into a large bowl, add boiling water and cover with a towel for 12 mins until it's done so I don't have to watch it. Add seasoning and mixed veg. If I don't feel like cutting veg I'll just buy a ready cut mixed bag and add that in. I add a few spoons Harissa paste for nice flavour. Divide between pots and I can have it on it's own or with fish/chicken. nice lunch/dinner.

Noodles - the ones that you just add water into. I keep a few of these when I can't be bothered cooking, add hot sauce or whatever seasoning you like.
Rice - I buy microwave rice if I don't want cous cous then I just put fish or chicken into my Ninja grill and dinner is done within like 15 mins.

Watermelon - I slice a whole melon, divide it between a few containers, add grapes, berries etc then I have fruit pots for most the week. Add yogurt sometimes.
Carrots, peppers, cucumbers etc sliced with hummus - can do the same with containers.

I buy a large pack of mixed nuts and just add chocolate chip chunks or raisins and divide between a few pots. Snacks for the week.

I'm gonna take the bus to the store in like an hour. Would you believe I've actually started drinking water recently...ME? Lol. That's one of the things my Instacart shopper yesterday DID get right. :) I've also decided to permanently stop buying that Jack Link's peppered beef jerky, because it's so bad for me. That stuff would give me terrible headaches that I wouldn't wish on my worst enemy. Definitely better to nibble on some Funyuns onion rings instead. Lol.

Beef jerky is one of the foods on the list of foods that migraine sufferers should avoid (The nitrites in jerky). Plus it's PEPPERED beef jerky, which I'm sure didn't help matters any. It also has tons of sodium.

I wish they had sushi without seafood because I'm vegetarian. I'm going to Aldi tomorrow.
Their quinoa crunch veggie burgers are wonderful.

Edited to add: I bought the frozen mini eclairs. I will report back. No dessert till after dinner!

I'm back. I can't give a true review on the eclairs because I have no patience to let them thaw for an hour. If I'm taking them out of the freezer, I'm eating them frozen.

Weight lifters meal prep. They take a whole day to do it for the week and their recipes are online. Vegetables are a good idea for you. Salad mixes, canned or frozen vegetables. It takes very little time to cook those. Make some crock pot meals and eat on that for a couple days. It can cook while you cam.

Cooking like that in bulk for the week ALWAYS causes waterlogging in food. I even have a chamber vacuum sealer. Doesn't solve the problem. I used to get drop shipped weekly meals from Nutrition Solutions and FlexPro Meals. FlexPro was the worst! Awful actually. However even a multi-million dollar company, Nutrition Solutions, couldn't figure out the waterlogging issue so that food tastes fresh and not soggy. Drove me CRAZY.

I looked into a private chef recently but it was the cost of food plus $350/week or $1400 plus the cost of food for the month. Nutrition Solutions was $240/week for 5 days then you supplemented it for 2 days or around $960/month + 8 days of other foods you have to buy. It still doesn't solve the problem of food freshness. Ugh the struggle is real.

Its not ideal-- but I'm all about the healthy choice entrees for lunch on my cam days. I generally do the low carb ones... believe they call them power bowls. For frozen food-- they're quite tasty and they fit my macros.

Cooking like that in bulk for the week ALWAYS causes waterlogging in food. I even have a chamber vacuum sealer. Doesn't solve the problem. I hear you with that. Actually there is a service too, in my country and they deliver every day. They come at the door with the 3 meals and 2 snacks for the day (according to the calorie plan I choose) and it's about $1000 a month. And they deliver the food every day at 6-10 AM (you choose the hour) and on saturdays they would also deliver the food for sunday too. I haven't tried them yet, but I will, eventually. They have good reviews.

I stopped meal prepping for more than 2-3 days worth. But what I do, instead is plan the meals ahead. I look at my calories need and I gather inspiration for next week. I make lists with the ingredients for each meal, I do get them ready (group them) and when it's about to cook for those 2 days, I got everything ready and it goes smooth and quickly. That was the only option I found for now.
Also, freezing the meals is a great idea (soups, stews, stir fry stuff, etc), but I don't have a freezer big enough for putting the containers.

When it comes about fresh stuff, such as salads, I am trying to just have the ingredients, my scale and my measuring cups at hand, to put everything together when it's time to make it. The only thing I prep ahead is the dressing.

So yeah... just knowing exactly what you will cook next week and get everything ready, is kinda the only quick solution I could find for now, related to meal prepping.
For example, those 2 recipes are on my list for this week (I think thursday it's their time to be cooked):

Really? I meal prepped BB food for years with no waterlog. My grains were rice and refrigerated meals up to 48 hrs and ate them then for the last 4 I used soups. Chicken noodle, chili, pinto beans were my 3 faves. Also beef tip stew. I froze the soupy things. I did not prep every meal just the main.

Overnight quick oats are great too if you like that. I add yogurt and chia seeds. Then I would always keep fresh salad foods on hand and baked potatoes. Corn flakes and bananas too.

And...cheese. Mozzarella preferrablt with also eggs and Kiwi fruit you can eat like grapefruit. Draining off excess water after cooking helps too.

Since we are talking about food and snacks, I came across this article that it's absolutely eye opening and makes you understand how many hidden calories are, even in the spusedly "healthy" foods. No wonder we gain weight, because we thought we ate healthy, or we thought we kept track of calories. I personally didn't see any weight drop unless I was logging calories in myfitnesspal, it was the only tool that helped me understand servings, portion, indulge myself and also lose weight, but anyway... Enjoy reading the article, it's soooo goood!!
Oh and in the first part it explains the "starvation mode" thing, that everyone is crazy about. It debunks a huge myth haha!
