Found that recipe on instagram, it's delicious and really easy to make. I highly recommend. My stores don't have the right type of chilies though so I have to substitute with serranos and I keep forgetting to add the lemongrass even though I have some in the fridge.

With my work hours and the number of people here (plus I’m about to lose two who contributed with making food), I’ve been using my Instant Pot and air fryer a lot more. I got one book… Instant Pot Indian… turns out pretty good, though I’m not certain how accurate my measurements are compared to the book… I never used measuring spoons, measuring cups, etc. but I’m pretty certain I’m close.

I don't know if there's any bakers here but I have a question about pie crusts; usually when I make tarts I do the cookie crumb crusts and avoid recipes that involve actual pie crusts because they always require those big food processors to make them and I don't have one. I know too that they make those pie crust slicer things that are for mixing the ingredients into the cold butter but they seem like a major pain in the ass. I was wondering though, I know you have to bake the pie crusts with the dough/butter super cold, but couldn't I just start and mix the dough with softened butter, then set it up into the pie dish and then just refrigerate it for like an hour so it will stiffen completely back up again and be cold for the baking? I've had both of these tarts on my recipe list and they both involve a real crust:

I also put a cookie sheet under the pies or tarts to make sure the bottom of the crust gets browned right.

^^^I love extremely spicy food, but it depends on the type of cuisine. I do not prefer my Indian food spicy level to be more than medium. One thing I wish I could make is chicken biryani---I mean I could make it, but unless it tastes exactly like the restaurant that I like to get it from I will not be happy and chances are it won't.

Wow! I didn't expect a real baker to actually show up I was just hoping LOL. After I posted my query I asked my mom and sister the same thing and my sister was like "YOU CAN'T USE SOFTENED BUTTER!" They explained about how it's the butter chunks that make the dough flaky or whatever. I watched some pie-crust-by-hand videos on youtube and it looks easy enough, I'll give it a try and if it doesn't turn out properly I'll buy that tool. I do not have room for a big food processor in my kitchen(even though I would love a pink or aqua one).

I gotta finish my last round of baked goods and then I'm gonna make that simple chocolate tart. And speaking of cupcakes I'm done making them....I was on a cupcake-making bender the last few weeks and they always come out of the oven perfectly moist and fluffy, but as soon as they go in the fridge it's like they instantly dry out and taste stale. Although there's probably a reason why people make them for parties and not just for themselves lol.....

^^^I tried doing green smoothies in the morning for a while, and I have no clue why but they made me feel like shit after drinking them. Like brain fog and lethargy. They were literally just blended ice, water, spinach and berries. ?? Idk if juicing wouldn't do that to me, but the whole reason why I was drinking the smoothies was for the fiber and my understanding is that juicing removes the fiber.

I have so much chocolate in my house........for the next couple weeks I am only allowed to make chocolate desserts(which I'm fine with became I am a serious chocoholic) because I have to get rid of it all. I am making a heart box out of chocolate as packaging for a gift I got my friend, and I want to make one for myself too, so I bought pounds of chocolate only to realize after testing that I got the wrong kind for the molds and that each mold needs way more chocolate than I had read so I had to go buy even more, and so now I still have a bunch of unused incorrect chocolate and the bottom half of a chocolate heart box that I'm going to have to melt back down and repurpose.

^^^I can make pretty much anything---but I am not naturally a good cook. I was one of those people that could fuck up pop-tarts and I had to learn everything the hard way. So if anyone wants to learn how to cook they can, but the shit can be really time consuming so I can understand why people don't.

Let's put it this way. I just tried to make ramen soup and I threw some broccoli in it to give it more nutrition. I ended up spitting it up because apparently there was a hair in my food and it got caught in my throat so I choked. I'm so grossed out now and I don't even want to eat it. So it's sitting on my dresser getting cold. That's my cooking story LOL

I'm also too lazy to cook. I mean it's one thing if I have my kid or other people to cook for, but when it's just me, I don't want to cook. I just want to eat lol

However, during the times I did cook, in addition to the chicken cordon bleu, I think I also made a really good baked ziti that everybody enjoyed. Maybe I'm not so bad of a cook, I'm just lazy.

The whole reason I wanted the heart was because I got my friend one of the latest Kim Kardashian Valentine's fragrances(we love the KKW fragrance line), and whenever Kim sends out the press kits for the Valentine's launches she always sends the boxes of perfume inside these huge giant hollow chocolate hearts decorated like the perfume bottles that have to be broken open with a mallet:

Me and my friend always drool over them when we see them on instagram because we're chocoholics, so I wanted to present the perfume inside a big chocolate heart but obviously it didn't fit. It's lucky that I picked the silver fragrance for my friend too because I have a bunch of silver edible glitter leftover from Christmas and New Year's cookie baking so I was able to make the heart silver. I told her I'm bringing her a present but she has no idea what it is. :hyper:

^^^It was a success, my friend and her boyfriend were covered in silver glitter by the end of the night. I also drank like 7 tequila shots and she drank two bottles of wine but that's another story. :beer2: The chocolate was especially welcome because she had raging PMS. Since I didn't tell her what the present I was making her was she said her guess was some sort of bejeweled face mask since I wear all kinds of crazy face masks and face jewelry because of covid lol.

Unfortunately I also made cupcakes and dropped half of them on the floor of the passenger seat in my car. Now though I have tons of those conversation hearts left over because I bought a ton not knowing how much I'd need for inside the chocolate heart and Idk what to do with them, they're not good enough to just eat on their own(I only like the white ones). Valentine's Day is my favorite holiday and I intend to make myself some sort of Valentine's dish, so I was thinking I could use them as decorations on cupcakes.......but I am sick of cupcakes. I want to try my hand at desserts, but I just don’t have a sweet tooth, whatsoever. I’ll bake cookies. People seem to like them. I couldn’t tell you why, because I’ve never actually eaten a single one of the cookies I’ve baked. I’m pretty sure I could do a tart, a cake, whatever and have it turn out fine, but I don’t really see much of a point when I’ll never eat it.

I'm thinking about some country style comfort food today? I haven't made any in a long time. Any like neck bones? I put them in a crockpot with a huge vidalia onion, butter beans and corn. The last hour I add a gravy packet to the pot then eat it with basmati rice. My diet has been so clean for months. But body is ready for something different.

Well I started making this tonight and wish I had looked more closely at the recipe beforehand because it's not a traditional piecrust that you roll out; it's supposed to be very crumbly with no big pieces of butter and needs to be pressed into the tart pan with a cup or something like how you do when you make cookie crumb crusts. I am literally so over cookie crumb crusts and swore that the last time I made one was the last because I.can.never.get.them.even.all.around. No matter how long I study it and tweak it and finally think I have it even all the way around, as soon as I pour the filling into it I realize it's completely uneven everywhere. So basically they always come out really ugly. I didn't even waste my time tonight because I knew it was pointless and just pressed the shit in haphazardly. It's currently in the oven.

I made split pea soup with ham hock and it turned out great. It was cheap too- a carton of chicken stock & one bag split peas from the Dollar store, 1 onion, 2 cloves garlic and a ham hock. I skipped carrots since I'm saving them for another pot of soup later this week.

Got a bun of marked down bread & voila, healthy budget friendly dinner. Got some other leftovers to pair with this soup, so no waste in the kitchen this week.

The coworker whose lack of domestic skills I pointed out must’ve felt a little embarrassed after I pointed that out, so he went out and bought an Instant Pot, air fryer, and crock pot. And he’s been sending me the recipes that he’s been making, photos of the end result, showing me the YouTube videos he’s been watching to learn how to do stuff, even brought in food he made a couple times for us to try (and his green chili was quite good, but a little spicy for me). On Friday, he sent me this recipe:

Only five ingredients and slow cooked spoke to me, so I prepped it yesterday, put it all in the fridge, and started it this afternoon, since I’d taken the day off. I substituted this Primal Kitchen Hawaiian style barbecue sauce (which is tomato based) for the ketchup, and I added a shallot, plus a very small touch of mango Scotch bonnet salsa that S really likes. It came out really well.

I made my tart, I forgot to put the damn heart candies on it but it's probably better-looking without them anyway. It's really good but I do wish the crust was sweeter, if I were to make it again I'd double the sugar in it:

It was the part with the seed things. Maybe she did oil it down in advance or because they were seeds they don't really need it, I'm not sure? Fish balls sound soo good! I just rewatched that video of him ordering them today lol. I've been craving Miso Soup for so long!

Right now I'm drinking cold pressed cucumber, pineapple, spinach, romaine, orange, apple, kale, mango, ginger, and lemon. Yum!!!

^^^LOL I am still not sure what part you mean because there’s so many seeds and beans and stuff in there, but everything doesn’t stick to everything. It depends on what ingredients and what cookware you’re using, but if you mean at the beginning where she’s toasting the seed thingies in the wok they’re never oiled or greased when you do that, you need the dry heat and because the seeds are dry they won’t stick. Eggs are a different story, even with a nonstick pan if I am not extremely careful my omelets will stick and brown. I have an easier time with crepes than I do omelets.

Dinner tonight is pork chops and mashed potatoes. Calorie dense yes but it's still winter. I breaded the chops with Panko crumbs, corn meal and flour.

An added bonus was that, if my friend from the community was over, her son enjoyed that part, because he saw it as a toy. Was kind of a pain in the ass to get all the garlic out of that one and clean it, though.

We use a lot of garlic here, so it’s kinda important that we have that. I know I have the knifework skills for it, but not everyone else here necessarily does, and plus it’s a lot more convenient, and you also have to keep in mind that even though I’m the one who bought the house, we’re pretty communal here, and tasks such as making food are a shared effort.

That’s why I don’t want to simply rent the room that S and her girlfriend are leaving. I don’t like charging the Irish woman rent and told her if she wanted to just live here under the same dynamic as the others, we could do that instead. She insists on it, because she says she’d feel guilty about if she didn’t, though I think it’s a little ridiculous for her to feel that way. The idea of renting to her was to remove any obligation on her end to do the things I expect of the others, but she does it anyhow.

I want to make eggs benedict when I’m at a long term hotel for work that has a kitchen so I’m not bothered by my roomies getting ready in the morning cooking/making food. I’ve never had eggs Benedict before.
