^^^I LOVE eggs Benedict, but for the love of god please make the Hollandaise sauce yourself. The pre-made stuff is literally disgusting. I am traumatized by the two times I ordered it at restaurants and they used it, I just assumed it was always made from scratch and my mom was like “You only order eggs Benedict at a nice restaurant otherwise they use the stuff in a jar.”

Well I did make this today, but for some reason even though it's the same chocolate ganache recipe as the last chocolate tart's this batch is a lot more runny and does not seem to be setting up......I may have to eat it with a spoon.

My tart ended up setting so I can cut it properly. Btw I thought Mardi Gras was always in March? I checked and this year it's like right after Valentine's. I usually like to make something on it because New Orleans is my favorite city, last year I made an all-chocolate tart(shocking) covered in Mardi Gras sprinkles and crawfish etouffee. I'm gonna still be eating all of my Valentine's chocolates on it this year. Also I never do anything for St. Patrick's but now that I know I'm 17% Irish I am feeling inspired to cook something for it.

Alligator, Lamb, Llama, and Goat. I dunno some of these animals I couldn’t muster up the courage to eat without throwing up that are on their website LOL
Always been so curious about alligator meat. Heard something about game-y taste with certain animals. I have to look up a recipe and plan it out so it tastes good. I’m not in the mood to spend money right now until the house situation is resolved but I can write down my food goals until then lol.

I’m saving that video for sure. I’ve seen some slow cooker recipes for coq au vin. I’m using two chickens (others in the house, plus S and her girlfriend are still regulars for dinner), so I might try one each way.

It’s 4:49am in my hotel and I’m busting out laughing at how accurate this is for me when I make desserts even when I have a recipe. I’ll see the dessert recipe and think “meh I’d like to add more sugar....how about cinnamon sugar too and what else sounds good to put in?” Until it reaches the point where I’ve made it and it tastes like crap hahaha. Just follow the directions, me!

There's two butcher shops here that have all kinds of exotic meats, the most exotic I went was antelope. I'm open to others but I need to have it at a nice restaurant first so I know what it's supposed to taste like(and if I even like it). Rabbit is something I've always wanted to try(although not many points for 'exoticness'). Speaking of lamb, I am not a fan of it---unless it's in middle eastern food. Then I love it. But only then.

Shark is good. Food growing up was rather plain, so anything which offers anything adventurous to the culinary senses, I’m going for it. Snake, alligator, sweetbreads… done all of those and then some. One thing I did hold off on… when I was doing an overseas AT for the Reserve in Korea, I was aware of a delicacy there called kegogi… bulgogi is beef, pulgogi is chicken… kegogi is dog. What stopped wasn’t disgust, it was guilt.

Lamb burgers from the grill are amazing! Check your local mediterranean spot to see if they'll cook them up for you. It blew my mind the first time I had one.
Tonight I'm making flatbread pizza with roasted chicken, sundried tomatoes and garlicky alfredo sauce.

Okay so I made those shrimp enchiladas last night and I was not a fan, it was just all too wet for me. I should have known since I don't like wet burritos, but I thought because it was cheesy and seafoody that it would be okay but it wasn't. I still ate them, they weren't bad just not my thing. I have some leftover shrimp and some leftover consome and tortillas from when I made chicken birria tacos last week so I'm gonna finish it all up today by making some shrimp ceviche tostadas and pretend I got mariscos.

No, not any sort of badass. Just inquisitive and a little adventurous.
Did a lemon butter roast chicken Friday. Chop up half an onion, stick it in the cavity, coat the skin with butter (I used salted butter), juice and lemon and pour that over it, sprinkle on a little salt, paprika, thyme, and parsley (I used fresh parsley), cook on low in a crock pot for ten hours. I just fired it up right before my towing shift.

I've been making apple tarts this week, the first time was interesting. I used the Ina Garten recipe I linked.....usually when I see people baking tarts with flat dough they create some sort of raised border around them but in her version she didn't, she just kept the dough squares completely flat. I didn't think anything of it, and idk how it works for her but because the tarts were so flat the sugar-butter-caramelization-juices all dripped off of the tarts and onto the pan. :confused: I had to add more butter and sugar back on top and then just attacked it with my kitchen torch to get the caramelization on the tarts that way. When I made them again I made them bigger and with raised borders and that did the trick. This is one tart before I added the apricot glaze, one with it, and then one of the bigger ones I made with a border and I added powdered sugar to make it prettier:

I have never baked anything that made the house smell so good, and they're delicious. I don't think I'll ever feel the need to make an apple pie when apple tarts exist in the world.

I'm gonna make a blueberry tart next and after that I'm not too sure, I either want to make one of those very typical bakery tarts with the puff pastry and the custard and the berries on top or this southern pie I keep seeing which is basically chocolate pudding inside of a regular pie crust with meringue on top. Although I still have a bunch of chocolate leftover from the chocolate heart box and I could use up a big portion of it if I make the chocolate lime tart I've been meaning to make for forever.

When I was younger, my guilty indulgence was the chicken carbonara sub from Quiznos. There’s one in Colorado called Cheba Hut I want to try. I remember seeing it, but we never ate there. I’m told they’re really good, and this from someone who despises stoner culture.

I used to be obsessed with a Togos at Cal State Fullerton across from my high school when I was on lunch break. They had pre-made sandwiches that tasted heavenly & soft they would put in the fridge for an easy grab & pay. But when I ordered straight from the cashier, it tasted dry and not as good at all. It was so strange that there was a difference.

Only problem was I thickened the curd too much so it wasn't liquid enough to level itself out smoothly so the decorating was fucked up. It was supposed to look like this:

Also my homemade crusts tend to shrink up really bad even when I weigh them down, I think maybe I need to be shoving more dough into the pan? That curd was amazing though, I've made a bunch of lemon and lime pies and tarts and this was the best filling out of all of them, at some point I plan to make a tart with just that in it(which omg it's going to take forever zesting two bags of key limes, they're tiny) and some sweetened sour cream on top.

If you like mushrooms, that Asian mushroom stir fry I linked is really good. I took advantage and bought all these mushrooms that I've never tried before for it:

And I learned that those ones on the upper right are used a lot for a scallop substitute because their texture is so similar, and it is really similar.
I used up my last frozen pie crust on lemon meringue, I definitely got crusts that were too big because both the pies I used them for did not get filled up enough:

This is definitely the best lemon meringue I ever made, I used the Preppy Kitchen's recipe and the filling is perfectly dense and creamy. I hate when you get lemon meringue or key lime pies and the filling is gelatinous, I like it to be thick and sliceable. Also I saw Meyer lemons in the store, they're orangey, and I was temped to use them because I've never had one before but I decided to play it safe and used regular lemons....but later after I made the pie I was talking to my mom about it and she was like "You know what you're supposed to use for a REAL lemon meringue pie? Meyer lemons." :grumpy:
When my lemon meringue pie is gone I'm gonna make a chocolate caramel tart with an ice cream cone crust and then probably a key lime tart with a shortbread crust and sweetened sour cream on top. Oooh I don't particularly LOVE to cook but these are my favorite (spicy) and stupid easy recipes.

The sauce takes like 2 minutes to make and the chicken thighs just go in the oven. I do collard greens with it, just done in a pan with olive oil & cayenne & salt/pepper.
- Salmon with habanero mango salsa
Step 1: cut slits in salmon skin so it will crisp up. Drop in oiled medium high heat pan, skin side down, until pink 3/4 of the way up. Flip & cook to finish.
Step 1.5: 1/4 of a red onion, a mango, dash of lemon or lime juice, little bit of salt, and habanero to taste. Voila, salsa.
I put it all on a bed of white rice.
If there's anyone who REALLY likes hot food, I have my SO's hatch green chile stew recipe :devil:

If there's anyone who REALLY likes hot food, I have my SO's hatch green chile stew recipe :devil:
I love super spicy food.....but I have nowhere to buy hatch chilies here. :'(
My favorite spicy thing to make is jaew sauce: https://shesimmers.com/2009/06/how-to-make-jaew-thai-dried-chilli.html I like to make a flank or skirt steak and slice it really thin, throw it on top of a bunch of sushi rice and then dump a bowl of jaew sauce all over it. I double the chili flakes and if my grocery store has fresh thai chilies I mince them up and use in place of pepper flakes.
I made my my chocolate caramel tart with the ice cream cone crust and it did not go well. I used 18 crushed cones like recipe called for and it made waaaay too much for the pan and wasn't sticking together. Turns out you need 6oz which with my cones only required 12. Oopsie. I was going to throw it out and make a new one but after sitting in the fridge overnight it was holding together so I just used the wonky crust. Then, the caramel recipe said you just leave the sugar/water/corn syrup mix on medium high till it turns dark amber which should take ten minutes, but after over ten minutes it had barely darkened and eventually turned into a white paste. After watching a video Martha Stewart mentioned that you have to lower the heat so that the caramel doesn't foam over....which was not mentioned in the written recipe. So I had to make a second batch. Then I was not the biggest fan of it after it was all done, the filling was like 90% caramel with a 10% layer of chocolate ganache and I think it should have been reversed; a chocolate ganache filling with a thin layer of caramel would have been way better. Plus it was practically impossible to slice with all that caramel. No pics because it was ugly LOL. ^^^You can go on YouTube and see all the different folding options to find one that might be easier for you. I cheat though, I just fold them in half and seal the edges. Unless someone else is going to be eating them I don’t care if they look proper.

That Beef Stew looks amazingly yummy. I so miss homemade beef stew. This has made me randomly crave french onion soup. I used to get it all the time when I lived in Downtown LA lol.

They are good but I don't think it's worth the hassle of needing to fold each dumpling individually.
That looks really good! I want to try that. I keep forgetting to order the ingredients to the mushroom bisque we were talking about. If I can't get in ingredients by delivery, I'm to throw caution to the wind, just going to go to the store.

I swear I'm not trolling the cooking thread- I might do Ramen noodles tomorrow in order to use up some eggs we have, and to avoid having to cook for myself since my boyfriend is out of town.
I try to avoid reddit now but a lot of redditors make an art form out of Ramen noodle dishes. I might sneak back on there to look for pointers.
