Today we partially cooked for 2 days:

I roasted a whole tray of potatoes:

Part of it has been cooked, for 5 minutes, with spring onion, spring garlic and parsley (Basically in a bit of oil onion and garlic been threw in, left for a couple of minutes to brown, then added potatoes and mixed for a couple min, then parlsey at the end):

Served with pork tenderloin and salad (lettuce and cucumbers):

Tomorow we eat same thing, except the pork, we will probably grill some salmon. I need to see what meat we have left in the freezer.

^^^I always want to roast mini potatoes like that but I feel like it’s a waste to only do it for one serving. Although I would use the oven to bake one baked potato so maybe I need to get over it and do it. How did you make them?

Yeah, I usually bake a whole tray and just re heat them in the oven, or in a skillet (or add some cheese sauce and create some new recipe haha).

Simple: rubbed them with oil and salt in a bowl, baked at highest temperature (no fan) for 25-30 minutes (it was 30 this time). Then I take them out and did cover the tray with another tray, for at least 10 minutes, to have them soften up a little and also to let them naturally unstick, otherwise I'd have to scrap them, lol. I do the same with oven fries, only that the time is less (maybe 20 min) and in the last 10 minutes I use the fan, to crisp them. I would have used the fan on this batch of potatoes too, but I had to put the meat and I don't use the fan on it, so I left them like this.

I realized that I'm not going to be able to make that coconut cake next. Between the SM contest and the fact that I have to make a dessert for Memorial Day I don't have time, so I'm going to make the chocolate lasagna next because it's really quick plus it will allow me to use up the leftover cream cheese from the cupcakes. For Memorial Day I'm going to make a lemon icebox pie because they're easy AF to make and deliciousssss.

I didn't realize until the night before I made it that the guy's recipe was for a deep dish pie plate, which I don't have. So I ended up with two icebox pies; the one I took to my mom's house and then the tart version I made with the extra that couldn't fit in my normal-depth pie plate. It worked out though because now I have my own personal one since I left the big one at my mom's, plus it means I had one to decorate since I didn't decorate the big one and just slapped the topping on in a big pile.

Didn't get a cute slice photo because for some reason the cookie crust completely crumbled upon cutting. It held together like normal in the big pie and I've made crumb crusts successfully in that tart dish a million times so I wonder if it's because I put too many crumbs in it. You can see how crumbly it is:

When the tart is finished I'm gonna make homemade pop tarts and THEN the coconut cake. Then a s'mores tart.

Okay so next time I am going to need instructions for morons, I did not realize that they needed to be peeled. So I peeled them at the end LOL. I was like.....why do they look so different? I never baked pale potatoes before and thought that yours still had the skin on and that that's what the skin would look like after roasting. This was them:

I've made s'mores tarts a million times but they've always either had marshmallow fluff on top or Italian meringue. This was my first time using actual marshmallows and it may be the best one of all.

Also my phone camera may be too flattering and the light can help, but it definitely looks like my potoatoes.

I peel the regular potatoes only, you know... the regular ones.

PS: Your steak looks amazing!!!! You nail it!!!!! And I see you're an asparagus fan. I tried making asparagus but I always had it stuck in my teeth, I felt like chewing chopsticks lol. I guess I will eat at a few restaurants to get a feel on how it should taste before trying at home again.

I did bake them at same temp like you, on the middle rack. I made the Celsius- Fh conversion. They look similar tho. But yeah maybe u kept them too high, i always bake things at the middle.

Oh, yes true, it's been years when i tried cooking asparagus, maybe i should try again and make them sooooooft!

Mhmmmm the cheesy chicken is something I discovered at a shawarma restaurant. The holy trinity for me, cheese potatoes and meat. AMEN.

I cook pretty high in a little oil then deglaze pan with butter .
J doesn't know how I do it ( higher calorie haha ) and I don't plan to tell him .

I had lettuce almost every single day in the past 2 weeks, my garden has been producing like crazy. Half of my fridge has been full of containers with lettuce leaves (that's why I actually bothered to eat, because they have been washed, drained, stored and ready to make a quick salad).
It's the last container tho, I think I have enough for 2 more salads. My bf was joking that we will have horns growing like goats, for how much lettuce we ate, lmao.

Anyway, today I had lettuce salad with avocado, orzo pasta with some frozen healthy mix (soy beans, peas, sunflower seeds, corn and edamame) and grilled salmon.

The first 2 on top are cheesecake tarts, in the middle of them is some... vanilla mouse with some forest fruits sauce, in the left is a mojito mousse, a vanilla eclair, bottom corner left is a mango mousse and in the bottom right it's some chocolate-coffee cake thing...
I'm only eating half a piece tho, not the entire one, hahaha. Because they are fucking expensive and because I am not working out in vain!!

I like outdoor grilling too, but just for me I don't want to mess w/it.. Had an electric charcoal starter, no outside outlet here for it either.

Anyway, I don't use the kitchen bc of the slovenly roomies :(

Tefal makes some good interior grills, you may wanna check out. My friends have one and they are happy with it. But since you're not using a kitchen, not sure you wanna deal with the smoke and the smell, because no matter how you grill the meat, you know there's gonna be some... unless you have some outdoor space, a balcony or a porch or something, to cook the food there. In that case, a cast iron skillet should be enough too, actually...

Speaking of water, I simply make lemonade with honey hahahaha :)))) That way I am drinking bottles lol.

Or ice tea, now that's summer I simply make a super concentrated tea (with 5-6 tea bags, fruits and peppermint usually), then mix it with a big bottle of water and honey and put it in the fridge. DELICiOUS!

This weekend I was at a friend's house, at the country side, so the boys cooked outside. They made morrocan stew. We didn't have beef, so they used pork. Soooooo morrocan, lol :)))))) But it was delicious!!!! I don't like beef much, nor lamb, so yeah... pork is good. Lol.

^^ I suck at making anything asian, I definitely need to buy some spices and sauces and experiment more. The only "asian" thing in my fridge is soy sauce and sesame oil, lol.

Meanwhile... more zucchini. I think I'm gonna make a huge batch of zucchini fritters batter and freeze it. You know, putting on a tray and freeze them, then just fry them. Or oven fry. It's just sooo much zucchini, they keep popping like popcorn, soon I will be burried in zucchini :rotfl::shocking:

^^^How do you make your pork tenderloin? I need some new meat ideas. I currently am making a whole chicken birria which means I'll be eating chicken tacos and consome for the next week, and I made my favorite red salsa for them which means I better buy some orajel because I'm about to have hella canker sores. I'm thinking after the tacos are ate up I might try making crispy, roasted zuccini, and either today or tomorrow I'm going to make this:

^^^ I make it just like I make the beef, when I explained in the other post! Same technique:
- Rub some oil on the meat, let it rest till reaches room temp
- Put it in a hot skillet 3 min upper side/ 3 min lower side/ 1 min other sides. Meanwhile heat the oven. (If you don't bake fries beforehand. For example, I did put the fries in the oven 20 min prior starting to cook the meat, on the lower rack of the oven, then added the meat on the middle rack).
- Quickly transfer in a small tray, add some salt (I also add some butter on top), leave it in the oven for 10 minutes (200C or 392 F), take it out of the oven, cover it and let it rest for another 10 minutes. Same with fries, cover the tray, so they get moist and unstick from the tray.

Omg that caaaake!!! I had some nutella crepes as a desert, these days haha.

So even though I have never had butternut squash in my life I saw this roasted mushroom/butternut squash pasta recipe on tiktok and thought it looked really good so I made it:

Next time I make a cake recipe I'm halving it and just making one layer. 2 layers is too much cake, even with giving my neighbor some. I threw out the last 2 pieces of my coconut cake because it took too long to eat.

I'm trying to think of what dessert to make after my cake runs out; I'm thinking either a key lime tart (one of my absolute favorite desserts) because I have a bunch of frozen egg whites to use up, or chocolate chip cookie sandwiches. I think I'm going to make the zucchini this way:

Yeah I got fooled with the butternut squash trick too and I didn't like it.
But I love zucchini noodles. They are delicious raw, I don't even cook them, I just make the sauce and put them raw in the plate and the hot sauce cooks them just enough.

It was not good. Took a few bites and threw it out.

Then I made chocolate chip cookies and they came out fine, but I used milk chocolate chips and they would have been way better if I used semi-sweet:

I have been enjoying roasted zucchini so that's been fortunate, especially as someone who struggles to get their greens in. Once I use up all the zucchini and chicken I have in the fridge I'm going to make this:
