I wasn't going to make any Halloween treats since....Halloween candy. But this bark is so cute I'm gonna do it: https://www.tiktok.com/@gabby.jaye/video/7158191826866883882?is_copy_url=1&is_from_webapp=v1

Well mine isn't as pretty and I accidentally split one of my ghosts, but I did it:

Also the reese's pieces were so good with that chocolate I wish I had fucking covered the bark in them.

I'm already planning for Thanksgiving; my mom does the turkey, the stuffing, the gravy and the greens so I have to do mashed potatoes, rolls and a dessert. Last year I made rolls from scratch and it was a pain in the ass so I'm not doing that again. I have seen people on tiktok do this thing where they put canned crescent rolls in a bundt pan, flavor them up however you want and bake them: https://www.tiktok.com/@sweetsbyshanice/video/7151548226682752302?is_copy_url=1&is_from_webapp=v1 So I'm going to do a honey butter version.

Then I saved this tiktok recipe a while ago for the next time I needed to make mashed potatoes so I'm gonna make them this way: https://www.tiktok.com/@violet.cooks/video/7130710601592048938?is_from_webapp=v1&item_id=7130710601592048938

This was also just posted today and I think it looks like a good Thanksgiving side so I'm gonna make this too:
https://youtu.be/qFWnT-Z7A2E

And then for dessert even though it's a more summery dish I have been craving a blueberry tart for like 6 months and still haven't made it so that's what I'm gonna make. I think I'm gonna cheat and use a storebought pie crust for the dough though.

^^I lied, I didn't make it but next time I go to the grocery store I'm getting the ingredients. I made this instead: https://www.bonappetit.com/recipe/bas-best-bolognese with rigatoni and honestly it wasn't great. It was fine; a homemade slow-cooked meat sauce is basically never going to taste bad or anything, but I expected more flavor and a better texture.

What are y'all making for Thanksgiving this year? I'm responsible for side dishes. I'm making potato casserole a family favorite and something new, mushroom and leek bread pudding. I made it a few days ago just to make it'll come out great and it was the bomb! I'm also gonna make cornbread souffle and cabbage with smoked turkey.

Here's the mushroom and leek bread pudding recipe

^^Mmmmm I love leeks and mushrooms and gruyere. A leek tart is something that I've been meaning to make for a long time.

Like a quiche? I only just started to use leeks about a year ago. I love onions but sometimes the texture is too much for some dishes. Like they can be slimy, I hate onions in greens. Shallots are too mild but leeks are a perfect in-between.

^^Something like this: https://www.marthastewart.com/356138/leek-and-olive-tart-two-cheeses

Not a tart but this looks bomb too: https://www.marthastewart.com/343518/leek-gratin

I LOVE onions but I have texture issues and always mince them no matter what the recipe calls for. I can't chew on chunks of onions, raw or cooked.

What's your recipe?

Well, it's pretty easy..I'm not a great cook..! I put the chicken breasts in a marinade of Cajun seasoning mixed with olive oil and lime for 3-4 hours. I cook them in a frying pan and serve with rice and a salad..

So it's just basically fried cheese? No added carbs? Fried cheese and a few veggies? 😂

I ain't mad at it. I'm just trying to clarify the situation because I love, love, love that leftover burnt cheese when I'm cooking. For some reason this recipe brings that to mind. 💗

^^You didn't have anything au gratin when you were in New Orleans??? https://www.delightedcooking.com/what-is-au-gratin.htm#:~:text=Au%20gratin%20is%20a%20French%2 0style%20of%20cooking,cheese%20simply%20with%20bre adcrumbs%20and%20dots%20of%20butter.

Well I was planning to make that damn beef and barley stew next but after seeing some steak frites in a tiktok I started fiending for steak with fries so I went to the store and bought steak and sweet potato fries for the next 3 nights:

57798

And I'm not going to be able to make the soup after this because the next time I go to the store I have to buy a ton of ingredients for Thanksgiving, and I need a ton of ingredients for that soup and I do not feel like tackling them both at the same time. I have been craving turkey sandwiches stacked with tons of vegetables so that's probably what I'll be making next.

I'm currently making a huge batch of chilli. Half will remain a stew and the other half is gonna be topped with cornbread. We like to top our chilli with chilli cheese Fritos and sour cream.

So I bought this beautiful bundt pan because I needed one for those tiktok rolls I'm making for Thanksgiving:

57804

but I doubt the rolls will actually take the shape of the hearts and since it's so pretty I'm gonna have to make something at some point that will. I'm thinking this with the creme anglaise on the side like he does:

https://youtu.be/3WoIdWFVYY0

Something dusted with powdered sugar would really look nice with the hearts but I don't think I can handle a cake with no frosting.

I made some homemade dog treats and I think they turned out cute. It's only peanut butter, pumpkin, flax and oat flour. I was a little skeptical before baking because the dough was so stiff but oddly they are softer and more cookie-like after baking. Doggy loved the dough in a way he usually never begs for food without meat or a meat substitute and he loves them baked too.

There's this Cuban pastry I have wanted to make for years ever since I saw this chick on Instagram get them from a bakery in Miami, they're called pastelitos de coco or something and it's just a pocket of puffed pastry with a wet coconut filling inside. I have never been able to find the canned coconut syrup needed for the filling whenever I've looked but I finally found some today so probably next week I will finally make them.

I have had this bookmarked to make for like a year, I'm thinking I may finally do it for Christmas:

Thanksgiving was a success. With the tart it was my first time using a pre-made but not frozen pie crust and it tasted miles better than the frozen ones do, the whole thing came out perfect and I served it with homemade whipped cream. The maque choux was amazing, the potatoes were amazing, the crescent rolls came out a little undercooked which my mom surmised was because of how thick my bundt pan was, but we still ate them. Everything my mom made came out perfect, now it's time to think about Christmas. I'm not going to do that crepe cake that I linked because my mom says she hates chocolate + orange, so I think I'm going save the chocolate bundt cake for Christmas. We're thinking Armenian-style lamb kebab for dinner.

I did it. It was a disaster. ....So I made it last night and it was good, nothing amazing but it was a nice beef stew, whatever. Overnight though the barley absorbed ALL of the broth so now I basically have a huge pot of barley with some beef in it. I reheated some today and added water to try to turn it back into soup and it tasted so bland, I ended up just picking the meat out and throwing the rest away which is what I'll be doing for the rest of the pot. :yuck:

I love this thread. I really enjoy cooking and food in general, but when I'm going through a bit of depression I tend to find myself throwing meals together - I usually still eat homemade food but just don't put as much love into it as I'd like.
I just bought ingredients to make chicken in white wine and tarragon tomorrow. I'm also going to try making more interesting salads from now on.

These did not work out either. I realized that I still did not have the right canned coconut filling, what I needed actually has grated coconut in it. I used the filling I had and added my own coconut flakes to it and cornstarch to thicken it up and filled the puffed pastry with it but it wasn't that good. That coconut syrup had a coconut oil type of flavor and I hate the taste of coconut oil.

I did make this key lime chocolate tart for the second time with the extra storebought crust I had from Thanksgiving: 57831

I'm getting over my food snobbery to make a dish I would normally never like. I dislike green beans lol.....

I'll report back on how it turns out.....

Genoveve
12-19-2022, 04:05 PM
^^This is my favorite recipe with green beans (minus the basil): https://www.marthastewart.com/907409/thai-steak-stir-fry

So I finally made Yorkshire pudding and I was underwhelmed. They turned out properly they just tasted so bland, I used lard though and I'm sure if I had been able to use beef drippings they would have tasted better. At one point, because I made enough batter for a few days' worth, I added brown sugar to them and while they didn't rise up like they're supposed to they tasted good. The flavor reminded me of the Cheesecake Factory's brown bread.

Also, something that happens to me every now and then is I will make a new recipe and love it, and then the next day the thought of it grosses me out. That just happened to me with this: https://cooking.nytimes.com/recipes/1018070-pork-satay-with-thai-spices-and-peanut-sauce I saw someone on tiktok eating pork satay and it made my mouth water so I made that recipe, I thought it was amazing and even loved the cucumber salad and I don't even like cucumbers, then the next day when it was time to eat it again the thought of it grossed me out. I threw out the remaining cucumber salad and am going to have to throw away all of the remaining marinating pork. I thought the peanut sauce was amazing too but felt like it masked the flavors of the marinade so I decided to make spring rolls to eat the peanut sauce with and now I don't even want that.

I'm making bratwust sandwiches tonight, I saw someone eat a bratwurst sandwich on tiktok like two weeks ago and have been fiending for it ever since and finally found proper bratwurst today. I'm going to experiment with putting caramelized onion on them instead of saurkraut (but I also have sauerkraut in case that backfires).

^^My vote is for the coconut and white chocolate sponge.

I'm gonna make the chocolate bundt cake I linked on the last page but I don't think I'm gonna bother with the creme anglaise. For New Years' Day I'm gonna make this but add a glaze: https://www.marthastewart.com/338916/blueberry-lemon-bundt-cake and this for dinner:

Wow Genoveve! That key lime chocolate tart looks amazing! Another vote for the coconut and white chocolate sponge. I'm not sure if I'm going to cook anything to bring to Christmas with my family. Might just pick up a few bottles of champagne and that should be keep everyone happy.

Me too tbh. I'm so glad all I have to do is make a dessert and bring some prosecco. Normally I make a bunch of Christmas cookies but I can not be bothered this year. I'm really craving the Italian cookies with chocolate and sprinkles like these: https://www.amazon.com/Individually-Thanksgiving-Colleagues-Sterns-Bakery/dp/B08PG515L9/ref=asc_df_B08PG515L9/?tag=hyprod-20&linkCode=df0&hvadid=563624696586&hvpos=&hvnetw=g&hvrand=18009195636891552745&hvpone=&hvptwo=&hvqmt=&hvdev=c&hvdvcmdl=&hvlocint=&hvlocphy=9030031&hvtargid=pla-1638351880448&psc=1 but I am not going to the grocery store one more damn time before Christmas. I'll have to wait and get some for New Years. I'm trying to come up with some more veggie recipes.
Meat is getting expensive and I think I can do veggie 70% of the time anyway without feeling like I'm sacrificing much.

First up, I'll do crumbled soyrizo , potato, and bean tacos.
^ That mix could work for a dinner. Then I can use it again for a couple breakfasts with an egg fried up.

Kimchi, garlic chili oil, ginger paste, tofu, mushrooms, stir fry noodles and fish sauce. I like stinky foods.
