I like spinach lasagna but hate when they turned watery that's why I rarely make them.

I just learned the best way to avoid watery spinach lasagna is use frozen spinach and squeeze all the water out.
Much less work than fresh spinach. Now I'm excited to try it out.

my lasagna ingredients: frozen spinach, eggs, ricotta cheese, shredded mozzarella, grated parmesan cheese, chopped parsley, black pepper, salt.
I have a feeling this will be a success!

I was thinking of making eggplant parmesan again but I feel everyone got eggplanted out. I've already made it on Thanksgiving and a couple days ago for my sisters.

this thing is very individual...I 've thought about it, personally I couldn't interfere and tell her that she 's cheated on. I 've heard stories when the ones who decided to interfere and tell were treated bad for that. Not that I 'd be afraid of it, but the idea of bringing such kind of info...Naah. Not my business.
Also, if I were cheated on, I 'd prefer to find it out different way too..like...catching them fucking.;D

I guess recently if we were vaccinated (we have to provide proof) that we didn't have to wear face masks. I've been wearing my face mask regardless. I am thankful for that they take our health and safety seriously- with social distancing measures, cleaning, and encouraging vaccinations.

Yes, you can still catch covid being fully vaccinated and boosted but vaccines are not supposed to be covid proof. Its purpose is to make symptoms milder.

If that's a problem then stop wearing seatbelts because you can still die in an accident!

I fully, 100% support any company that mandates vaccines. It's past due!

We used to have to make reservations at the Oriental restaurant, otherwise forget it. I agree that Oriental people are smart and very hard workers! They know they pretty much have a monopoly on Dec. 25. People tip well on Christmas too!

Excited to celebrate Christmas with my family tomorrow. They have in laws so we always do it on Christmas Eve. Christmas is not just one day, it's the WHOLE month of December. On Christmas Day I will work for a bit at my other high paying job.

I'll be making Spinach Lasagna and Kung Pao chicken with sauteed spinach and jasmine white rice. I never eat Oriental food on American Holidays but if that makes them happy then it's all good with me.

In other news, I just found out that I'm gonna be able to go for another degree. The grant offer came in the mail two days ago but I'm just now seeing it. I have a year to get myself enrolled before the offer is gone. This takes so much pressure off of our load and I am feeling so lucky and eternally grateful. Trust The Process.

I'm very excited too. Last year we didn't get to have Christmas until a week later because my daughter's whole family was sick. They have been sick this time too, but thankfully everyone's better. With 4 kids and 3 adults it's bound to happen.

There's always so much food. We always say "Let's keep it simple". That has never happened. lol

For me Christmas is a magical time of year, but it hasn't always been that way.

It feels more Christmassy for me this year, I think because in my new neighborhood people go ham with the Christmas decorations so it actually looks like a winter wonderland here---even though it's in the desert. Plus I have a tree for the first time.

My waldorf salad was a big hit at Christmas. Lots of whipped cream and a little lemon is the secret. Lemon keeps the apples from turning brown.

No watery lasagna is what I'd consider a success in itself. I cannot eat watery lasagna. You should try it! We had so much food I didn't touch lasagna.

I thought we were Eggplanted out but people were disappointed there was no Eggplant parmesan, lol!

if its your phone.... it took me a month to have apps deleted before I could go without. I would reinstall but uninstall bc of the guilt of being on it. i got tired of reinstalling lol

Yeah, it's overwhelming sometimes. I think everything is almost too convenient these days.

Yesterday, the instacart lady kept asking if she could substitute this and that. I missed a couple because I couldn't keep up. I had to keep refreshing the site because it wasn't working on the phone. Plus my son was on the phone at the same time. lol

Update: I just figured out why instacart was not showing up on my phone. I had deleted the app! lol

I was so excited to be going into the new year getting this long-overdue surgery, and now it's been a postponed a month because the hospital is cancelling all surgeries for the next few weeks (Covid numbers). I just got off the phone with them. Mom said she was afraid that would happen, but she didn't wanna say anything because she didn't want to upset me.

That bloodwork I had them do, and now I gotta start over and do the shit again as we closer to surgery date. Smh.

Thanks. I know, it's so unfair! :( It's moved to February 4 now. They're sending more Norethindrone to the pharmacy so that I won't have to be bleeding everyday until that appointment.

I did it! I have been home 1 year and my mom is completely debt free minus the reverse mortgage but that will be my debt
all bills up to date
starting a fresh year

I ordered her a cash booklet to save money (one for myself too) but mom does really good with cash and envelopes. she will hide them lol
I was able to get her aid care 5 days a week vs 3 days, the state will pay for 20 hours a month and i pay for the rest
i am so excited to stay on to of everything and not go in debt myself

my goal was the new year to have her start on a clean slate with a plan, the care service just confirmed they can do the extra hours


i had to leave family in the dust that never helped but had opinions. dusted, smoked, goodbye, i got this

That's wonderful to hear Erika! I don't think you are responsible for a parent's debt, unless you co-signed or are listed as a joint debter.
