I'm a huge fan of the Tillamook Medium Cheddar. I also love Tillamook Pepper Jack.

i like swiss too... at first it tasted weird, but ive grown to like it...
something about those holes...
this might be weird but i like cooked cheese... like almost burnt and hard
when i was a kid i used to microwave cheese:O

Chocolate Cheese. (Yes, I am from Wisconsin) It's like fudge, but it's made with cheese. Don't ask how they do it.

In India they make fudge and sweets with a type of cheese I think its called paneer.Ive never had it but would love to try it:)

Indian "paneer" is, to the best of my knowledge, just cubes of goat cheese. MrsC loves Palak Paneer, which is the spiced spinach/cheese mess.

I just Wikipedia'd "Paneer" and here's the answer:
/pəniːr/, from Persian پنير sometimes spelled Panir or Paner), is the most common Indian form of cheese. It is an unaged, acid-set, non-melting farmer cheese that is similar to acid-set fresh mozzarella and queso blanco, except that it does not have salt added. Another significant difference between mozzarella and paneer is the fact that mozzarella melts like any other cheese whereas paneer does not melt while cooking.

Most paneer is simply pressed into a cube and then sliced or chopped, although Bengali paneer is beaten or kneaded like mozarella. Paneer is one of the few types of cheese indigenous to the Indian subcontinent, and is widely used in Indian cuisine and even some Middle Eastern and South Asian cuisine. Unlike most cheeses in the world, the making of paneer does not involve rennet; it is therefore completely vegetarian. Paneer is a primary source of protein for Buddhists (typically those of South Asian origin) who adhere to vegetarian as opposed to vegan diets.

Paneer is known in North India and Pakistan by the same name; however, in Orissa and Bengal it is known by the name Chhena and in South India, by names derived from Paneer and Channa (not to be confused with Chana, the Indian name for the chick pea). The Eastern variety (Chhena, pronounced /tʃʰena/) crumbles more easily than the North and South Indian variants of paneer.

Just found a yummy new favorite cheese! Cambozola. I spread it on rye crackers w/a little black caviar on top. It's foookin delicious! A little haute taute midnight snack, lol.
