Pregnant (and not pregnant) nutrition
So my friend Darcy, who is a nutritionalist and an herbalist and a genius, just wrote her thesis on nutrition during pregnancy. It is really super informative, even if you aren't pregnant, because in every section she's like, "here's what a normal woman needs, and then here's what you need in this and that trimester and why and how to get it." I was at her house when she was doing the meal plan at the end and when she finally got it right she was like,"if everyone ate this way there would be no disease!" I learned a lot by reading it, and I generally consider myself well informed about food.

That's a great healthy eating plan to follow, but I doubt it would stop disease completely. People get diseases for a variety of reasons, some circumstantial or genetic.

I know that you're trying to help people, and while I do believe that good nutrition is very important...this statement,
"if everyone ate this way there would be no disease!"
is not only ignorant but it's also extremely callous. That's like suggesting that if a terminally ill person would have only eaten right, they wouldn't be dying.
I do hope that your friend didn't actually make that statement in her thesis. It's ridiculous.

What's a buffalo patty? That is a lot of cooking (to me at least-the microwave-master), but once I move and reeeeeaaally try to get away from the microwave I may try to sneak some of that in. The bean salad sounds tasty.

There's animal flesh for breakfast, lunch, and dinner. I think it's debatable whether that's the healthiest way to eat (see the book The China Study). Westerners sure do like to eat that way though.

Just curious, Lena, does she make provisions for vegetarians? Or people who don't have access to the good kinds of meat?

If you read the whole paper, yeah, there's provisions for vegetarians, vegans, and gluten-intolerance. It's pretty amazing.

No, that's a sample of how the ideal nutritional requirements could be met for one day, for one pregnant person. If you read her paper, she gives all kinds of things you can eat for the different nutrients you need, and tells you how much of the nutrients you need of you're pregnant/not, and then she wraps it up with that one example meal plan.
And just substitute different nutrient rich greens and meat. Look for grass fed meat, or eat lots of fish/fish oil, to get your omega 3's.
