Honestly, it's your own business what you do with your money. If you want, leave the joint account open but put nothing into it. Just let it sit. She can watch the empty account like a hawk if she feels so inclined.
I'd open your own account independently of her, and don't discuss it.
This whole situation sounds rather strange to me...
