What info do I give these guys? I use my stage email, but should I change my name and address too? Is there anyway that they could find out my info? Is there a "private" setting?

You should sign up for a business account and disguise your name. I use a business name on mine.
With a business account, the clients cannot see your name or address. When you want them to make payment, give them your email address and that's it.

I do not use ccbill because it's too much money. I prefer a few account with alertpay.

CC Bill is a great company, but yeah, it costs a lot to use their services. I'm about to launch my own site and will be starting with Magic Members software and Alertpay, then moving to CCBill if I ever need to.
