To My Amateur Chefs Out there: Suggestions for additions to sweet potato gnocci
I am cooking for a gent and have decided to make sweet potato gnocci from scratch. As a "sauce" I am making a spinach cooked in chicken broth and 3 different types of mushroom. My intention is to make the gnocci the centerpeice.
A google search suggested string sauteed with pepper flakes and coconut. Sounds interesting, so I will be testing it out tonight.
A friend suggested adding a bit of french bacon to the spinach mixture.
I was thinking about perhaps lightly currying or "jerking" a small piece of salmon as the protein.
He's been a wonderful client to me so I really want to make something nice! :)

if you're looking for a Manhattan flavor ... you might want to try ...
Ingredients
2 tablespoon olive oil
2 tablespoon chopped garlic
2 cups of evaporated milk
1 tablespoon black pepper
½ tablespoon crushed nutmeg
1 tablespoon flour
½ cup of parmesan cheese
½ cup cream cheese
¼ cup coconut milk
Directions
1. Take a pan and heat olive oil in it, then add chopped garlic and fry till slightly brown.
2. Now add flour, salt, pepper, nutmeg and evaporated milk. Cook until it comes to boil.
3. Wash the spinach thoroughly and let it dry. Chop it and give it into the pan. Let it cook for about 8 to 10 minutes at a low heat until spinach seems to be cooked.
4. Add cream cheese, parmesan cheese and coconut milk and cook until thick. Pour it over your dish and adore the lovely taste.

^^Go with that, the spinach & mushroom doesn't sound good with the sweet of the potato.
That is a hell of a recipe to try for the first time:)

No suggestions....but I think it's sweet you're going through all this trouble for a good reg.
I'd totally just order in and pretend I'd made it.

How about this one. The cider sauce brings a nice cutting counterpoint to the rich heavy sweet gnocchi. BTW, I am a total gnocchi junkie and I used to make my monthly pilgrimmage to Di Palo's in Little Italy for it. I highly recommend them or Balducci's for bomb ass Italian ingredients. I especially love the fish and lobster sausage--it's INSANE!!!
Recipe: Sweet Potato Gnocchi with Apple Cider Sauce
3 pounds sweet potatoes, scrubbed
Salt
2 cups apple cider vinegar
3/4 cup plus 2 tablespoons all-purpose flour
2 large egg yolks, beaten
Freshly ground pepper
2 tablespoons unsalted butter
2 garlic cloves, finely chopped
4 sage leaves, coarsely chopped
In a saucepan, cover the sweet potatoes with water, add salt and bring to a boil. Cover and simmer until tender, about 30 minutes; let cool slightly.
Meanwhile, in a small saucepan, simmer the apple cider over moderately high heat until reduced to 1/2 cup, about 20 minutes.
Peel the sweet potatoes and puree them in a food processor. Transfer 3 1/3 cups of the puree to a large bowl. Lightly beat in the flour and egg yolks and season with salt and pepper. Spoon the dough into a pastry bag fitted with a 1/2-inch round tip. Working in 3 batches over a large saucepan of simmering water, pipe out the dough, cutting it into 3/4-inch lengths. Cook the gnocchi for 45 seconds. Using a slotted spoon, transfer the gnocchi to a baking sheet.
In each of 2 large skillets, melt 1 tablespoon of the butter. Add half the gnocchi to each and cook over moderate heat until golden, about 2 minutes. Add the garlic and sage and cook for 1 minute. Stir in the reduced cider and serve.

Definitely something spicy. This is out there but maybe a romano & cream sauce brightened with sriracha or red pepper flakes. Perhaps a kiss of parsley just before serving.
