my BF brought me chicken mini's for breakfast that I ate half asleep, then I woke up, forgot I ate breakfast, and had chips and guac and half a bag of popcorn. Then I remembered I had a full box of chicken minis and lemonade. Dinner is cancelled hahaha.
I made these for my little brother this evening. (Little brother, HA!, he's taller and bigger than I am. Well just brother.) They turned out pretty good, except they're hard like hockey pucks when they cool, but he didn't complain. Lol! I have to figure out how to make them less crunchy. :O

For breakfast it was a salad because I did not feel like cooking etc. Now I am craving another salad. LOL I guess lunch or dinner will be another salad.

Not anything we do in Texas but here is chili made with chicken.
White Chili
1 pound of white beans soaked overnight, or three cans of canned white beans, drained
4 cups chicken broth. Use canned if you have to but best made with good stock
2 cloves of minced garlic.
1 large yellow onion diced
1 can chopped chilies
Teaspoon ground cumin
Teaspoon oregano
Dash of ground cloves
Dash cayenne pepper
4 cups of diced cooked chicken
3 cups Monterey Jack Cheese
Sliced jalepeno Chilies
Combine beans, chicken broth, garlic, and onions in large pot and bring to a boil. Simmer 3 hours. Add remaining ingredients except cheese and simmer for additional hour. Serve hot with cheese garnish and sliced jalapeno chilies
I've made chili w/ground turkey meat. :)
I won't talk about Snakes..:)
Today so far I ate hard boiled egg (white only), organic coffee, fresh pineapple
A bowl of white bean soup w/kale, a few Brazil nuts
A bowl of applejacks cereal with almond milk, too many wheat thins, salmon, collard greens, cornbread, and black eyed peas. Chocolate chip cookies too. Screw it, it's the holidays, I'm feeling depressed/hormonal. I'll eat better next year. :-P
All this chili talk in here.....it's funny because I'm eating vegetarian chili mixed with Spanish rice right now. So good.
Earlier I had mini pretzels dipped in hummus, raspberry lemonade, and a bowl of granola cereal with soy milk.
Also had some Moser Roth dark mint chocolate. Moser Roth is the best dark chocolate I ever had in my life. I get it at Aldi's.
