I'm cooking up all the leftover frozen meats in my freezer this week....
I've made meatloaf (1/2 buffalo, 1/2 grass fed beef), but this time I just threw in a meatloaf seasoning packet, one egg, and a can of sliced mushrooms. Tastes great with ketchup!
I JUST cooked up one of the most amazing things I've ever made, and probably the best beef dish I've ever made.... I marinated a flank steak overnight in a blend of 1 cup of olive oil, 1/2 cup of Balsamic vinegar, 1/3 cup of honey, 1/3 cup of soy sauce, salt, pepper, and lemon juice (all measurements approximate, I don't exactly remember). Looking back I should have added some ginger and garlic, but oh well..... I scored the steak really well with a knife, making small slits all over it before marinating. It sat in my fridge for about 24 hours, and I then I sliced it into strips, and broiled it over high heat, braising it in the leftover marinade, but not too much, so that the outside layers exposed to the heat became more crispy/beef jerky -ish, but the inside was really juicy and flavorful. I only broiled it a total of 10 minutes or less, it cooked really fast, and I cooked it to about medium. I noticed that when I sliced it before broiling, the marinade had really soaked in and absorbed into the meat deep from where I scored it and actually changed the color to a dark brown. Usually flank steak is a tough cut, but this came out REALLY tender/melt in your mouth because of how long I marinated/prepped it, and I think the olive oil and honey really "moisturized" it!
Last night I had Korean food for the first time in my life... wow! Seafood pancake and kim chi potatoes rock!
Coming up this week I am cooking my leftover tilapia and cod, as well as 1 lb of ground turkey breast..... I'm open to recipe ideas! :)
JD you put a lot of prep time into your food...I even saw you bust out a slow cooker:) Lucky person you cook for...
ha ha only myself! By the way, slow cookers are the ultimate lazy person's cooking tool. You just throw a bunch of stuff in there and turn it on. It's not actually cooking. :)
I have a Culinary Arts Degree, which I don't use & I cook for myself....I'm nowhere near your prep time. Good job
