There's no sense in looking at what other ladies are earning since it's not necessarily indicative of your potential earnings. Earnings depend on your looks, the services you offer, your specific location in the city, how long you've been escorting, your regulars, your personality, etc., etc.
Check out some local escort forums and advertising boards (cerb.ca is a good one) to see what the "going rate" is to ensure you don't get low-balled. Keep in mind that you offering sex to panty sales guys is a premium service since you're not regularly an escort (they don't have to know if you are), so you should be charing them MORE than average.
As for taxes, you pay them like you would in any other self-employed position. I recommend getting an accountant for the first year to make sure you do it right, and then maybe you'll be fine doing it on your own in later years.

As for the whole sugar baby vs. escort thing… That comes down to personal preference.
