i dont' understand why you can't eat meat ( unless you are trying to go vegetarian/vegan), or you can eat wheat products but not bread specifically?
Don't go on a diet. Make permanent lifestyle changes. I have a friend who is allergic and everything she needs gluten free. And gluten free bread tastes like crap. You are going to need a lot of dairy if you plan on cutting out all that protein from meat, and carbs from bread. Google gluten free recipes there is some good stuff out there
Quinona is gluten free, & has complete protein. It's a seed, you cook it like rice I believe.
I can't eat gluten, but I've always been that way so I know no different-I don't even buy bread I'm so used to not eating it lol. You get used to it and it's no great dietary loss. But, you CAN buy gluten free bread that does taste alright these days and many cafes and restaurants have options. Of course, it's annoying-but it's better than making yourself sick. Instead of a sandwich for lunch have a gluten free wrap, a rice paper rolls or sushi etc. Brown rice, mash sweet potato, quinona, gluten free pasta or bean pasta are healthier carbs and go well with anything.
You don't have to cut meat out if you are dieting, protein is important. Just opt for lean cuts and leaner meats.
I think metabolic, physiological and immunological health has a lot to do with our bodies ability to process what goes into it. Eating foods and food products made from pesticide producing wheat, corn and soy (soy is in pretty much everything) may not be the best thing to eat. I mean, if you can stick a tomato in front of a rat and the rat refuses to eat it, or put a corn cob in front of a mouse or squirrel and they eat everything around it but the corn, that says something.
Pesticide-producing crops: when an insect bits into it the internal organs explode bringing death to the insect (makes you wonder what happens to our gut)
Herbicide-tolerant crops: Genetically engineered plants that can still grow and not be damaged after heavy herbicide spraying

I had huge problems with weight but also bloating in my stomach, around my eyes, my nose and hands. It added 10 years of age to my appearance. I have since switched to a 100% organic diet. I felt different within 24 hours of starting. It takes a lot of discipline to stick to it and stores make it extremely tough. You have to take the time to learn what to do and how to do it. For breakky toast I cut a round of Eggplant and chargrill it then put a poached egg on top. Yummers!
I dehydrate or oven bake vegies to crisp (beetroot, parsnip, kale, sweetpotato).
Lighltly boiled cabbage becomes lasagne sheets (or thinly sliced zucchini/eggplant).
Seaweed noodles, enoki mushrooms, shredded zucchini are my pasta.
Even vegefrittatas bonded together with eggs and spices then oven baked can replace traditional carb elements.
Anyways, until you sugar detox completely the cravings (akin to heroin level addiction) will have you craving starch (which converts to sugar).
I have a sensitive stomach too.
I switch from straight pork meat to turkey meat. And I use almond milk instead of regular dairy or soy.
I tried gluten free bread but it tastes like shredded paper. Yuk! Maybe it was the brand.
Meat is all right, why cut it out? Lean meats are great. Beans and nuts, eggs and dairy are a good source of protein too, don't forget them.
From what Ive read (Sweet Poison Quit Plan), about 2 weeks. I know its not healthy but to combat sugar cravings I drank Pepsi Max during detox period when I craved a sweet fix. Seriously though, read his book, borrow from library, and it will give you some helpful info.
