I spiralized a butternut squash the other day- that shizz was amazing sauteed in coconut oil and salted.
Acorn squash cut in half and roasted with brown sugar where the seeds were.
Turkey wraps with goat cheese, sprouts, and dried cranberries- I like to spread everything out over the wrap before I roll it (for even distribution/ uniformity of bite), but you can cold burrito just about anything into a wrap.
I have a Nutribullet, and a can of tomatillos with a peeled clove of garlic, a hearty pinch of salt, and a handful of washed cilantro make awesome last-minute seasoning for tacos, burritos, enchiladas. It's best raw, but it's pretty darn good cooked, too.

My favourite thing to lunch on at the moment are pitta breads with grilled halloumi cheese and avocado. I freeze the pitta and then you can just put it in the toaster without having to defrost it. Easy to make, here's a quick step-by-step:
1. Toast the pitta bread
2. Take a small piece of foil. Place 4-5 slices of halloumi on it and whack it under the grill. Turn once they start to look a little brown and crispy.
3. Cut the pitta down one side, stuff in some mashed or sliced avocado.
4. Lick the avocado of your fingers. Mmm.
5. When the halloumi is a little brown on both sides, whack it in the pitta.
6. Put it in your face.
7. Nom.

I made beef stew in the crockpot last nite.. ( cooking for 5)... I got stew meat, potatoes, onions carrots mushrooms .. some pot roast sauce, beef stock., French onion soup.. bottle of beer, marsala wine ,, some spices.. like garlic.. fresh grated ginger.. salt, pepper. and don't forget the flour to thicken it up.. served over some yummy egg noodles ..
Last week I made chicken noodle soup in the crock pot.. .. the other nite I made a chicken stir fry with lomein noodles.

I'm glad this thread is alive again. I love making overnight oats and chia seed pudding. Both can get thrown together in about 5 mins and left in the fridge and eaten out of the jar just like that. Super quick and easy.

I try to make a ton of snacks and meals in advance when I know I'll be having a busy week. I make a couple different types of hummus, spinach dips, guacamole, bean dips, and salsa that I like to rotate through so I always can have something quick & easy to grab. I also like making meals I can portion out (foodsavers & oven safe/freezable bowls are your bff for this), freeze, and heat up later. Smothered burritos, french dip meat, soups (I try to keep 3 or 4 different types in my freezer), enchiladas, different types of burgers, chicken pot pie, & curry are some of my favs. Crockpots are also a huge time saver & anyone who doesn't already have one should definitely get one! They're super easy to use and there are TONS of really simple recipes online that make drool worthy dinners.
Personally, I've found that the easiest way to stock up on freezer meals is to just double w/e I'm planning on making for dinner and freezing half. I know some people cook a bunch of different things at once, but I hate devoting an entire day to cooking 10 different meals (especially when I can't eat all 10 in a day). Plus, it's WAY easier to clean up one meals worth of dishes than it is to clean up 10.
Alright, my freezer rant is over... here's my favorite chicken pot pie recipe. I normally use a frozen mixed veg medley instead of just the peas, add a cup of mexican sour cream to the filling, and replace the suggested chicken broth with "Better Than Bouillon" brand chicken bouillon (it makes all the difference flavor wise). I also tend to top it with cheesy biscuits instead of traditional pie crust.

Some of these might have been mentioned- and some might take too much effort, but some stuff I like:
Soups and stews are super easy and delicious. I like to make a big batch and freeze some in small containers so I can take individual servings out and defrost in the fridge. I love black bean tortilla soup (can add chicken), chili, veggie stews, minestrone etc.
Using a thick stew, you can make a pot pie or shepherds pie. I'm a vegetarian and have used a veggie beefy mushroom stew for this. I like to use puff pastry as the crust, otherwise mash some russet or sweet potatoes for a nice shepherds pie.
I love baked and mashed potatoes and sweet potatoes. They taste best cooked in the oven but microwave works too.
Hummus or white bean dip.
Oatmeal- with fresh or dried fruit, nuts, peanut butter, flax seed
Pasta salads
Pasta with sauce and sautéed veggies
Stir fries- just cut up veggies and your favorite meat/meat sub, and you can buy sauces pre made. I use frozen brown rice from Trader Joes. Quinoa also cooks in like 10-15 mins and is pretty fool proof.
If you like tofu, you can leave tofu marinating in the fridge and then bake or pan fry it. I like it with an Asian marinade or BBQ sauce. Serve with rice and steamed/cooked frozen veggies. Or I love BBQ tofu sandwiches. Can work with meat too of course.
Roasted veggies are tasty and just have to chop them and let the oven do the magic.
Burritos/tacos/fajitas. I love Amy's vegetarian refried beans the best. Target sells them for cheaper.
Oh and a healthy snack/dessert- you can use frozen bananas and put in food processor or blender to make banana soft serve. You can add cocoa powder, peanut butter, a little milk etc.

Sorry you will be alone on thanksgiving, hope you enjoy the holiday though. But if you want to do traditional meal,you could always get a single turkey breast they sell in some stores cook that in oven and do the smaller self portions for potatoes smaller can of yams and a box of stuffing and make your own thanksgiving meal for one. Im not sure what you normally make for thanksgiving but its an idea if you want to make a traditional meal to have on that day for yourself. You can always add in anything special that you like to add to it, and left overs for next day is always good so you dont have to cook that following day.

Has anyone tried the all-inclusive thanksgiving meals that grocery stores offer? Whole Foods offers a couple of options I'm considering- my household has been under enormous stress recently, and while this is my favorite holiday, I don't think I'm up for travel this year to do a big family dinner. It would be awesome to have the full spread without having to wash all of my pots and pans several times.

Im doing the publix meal for the second year in a row, feeds 4-6 ppl for $45 and is more than worth the money to not have to cook or do dishes

I AM SNACK GOD. Funny I actually have a reputation for constantly eating on cam, and have been known to do pizza shows LOL. I love kale chips while I'm on cam, trail mix, carrots, celery, chips, dip, bananas, turkey jerky is awesome for getting that protein in but tonssss of salt ahh. I'm horrible at cooking but I cook a mean frozen pizza. My favorite snack is GREEK YOGURT!! 15g of protein in a serving of Fage yogurt and when you're constantly sticking things in your vagina all those probiotics & acidophilus are crucial

ill most likely be alone to, my gf went to chicago for the week for work and my family is 6 hours a way and just seems like to far to drive for one day so i just plan on eating junk and watching football

Just got home from food shopping. I took suggestions from here and bought my Thanksgiving goodies.
Stuffing, homemade gravy that the store prepared, canned Yams, sliced chicken breast(not really into turkey). I really wanted pumpkin pie, but all they had was a half of apple pie.:yummy::yummy::drink::cheers:
The store is like a trader Joe's type, so it had a lot of healthy choices.
I also bought chicken salad, orzo salad, pasta salad with kale, frozen turkey meatballs, feta hazelnut ravioli, parmesan cheese, mozzarella balls to have with basil, italian tomatoes, and fresh basil, drizzled with olive oil. Fozen burrito, hummus, chips, and...chocolate cupcakes.
To drink..lots of iced tea, and coffee.
That should be enough food to last until the weekend.
