I know that all clubs will be different, but is it more likely that a club will put you on a set schedule? Set days and shifts? Or is it more likely for a club to allow girls to come and work whenever they want?

Some of the large clubs in Vegas hire you for a specific shift based on your looks. For example, the Spearmint Rhino 9pm-3am (I think) shift is considered the highest tier you can get on.
I'm not sure if you get put on a mandatory list of days/times you have to show up though. Someone in Vegas can give you a better answer regarding that though.
It is mostly open scheduling, but the bigger clubs may have a cutoff time for you (can't work later than midnight for example) . I once worked at a locals club in Las Vegas, and they never asked me to keep to any kind of schedule at all. The downside is that if you aren't a good self starter, you may find yourself scrambling for money at the end of the month.
Been working in Vegas 8+ years now. It's pretty much what's been said here -- but it's not quite so ... cut and dry. It REALLY depends on the KIND of club you work at.
The bigger, better known clubs (Rhino, Sapphire, Crazy Horse 3, Treasures, Olympic Garden, etc.) have pretty open scheduling, like Tourdefranzia said. The only thing I haven't seen mentioned is the shift minimums -- it's usually 6 hours. You can come in basically whenever you want, but plan on a 6 hour shift from the time you check in with the DJ on the floor. You'll sometimes get put on a specific shift -- Rhino is infamous for it -- and you'll have to be out of the club by a certain hour of the night. USUALLY it's like 9pm, if you get on a restricted shift. That doesn't always necessarily mean there's something wrong with you, or that you're too fat or not pretty enough or whatever. Sometimes, one club will reject you because they've just got too many tattooed girls or too many redheads or whatever. You never know. Don't get discouraged.
I haven't run into a legit SHIFT schedule in a really long time. Even some of the little local clubs that used to hold onto that sort of thing seem to have given it up. You basically show up, pay your free, work your minimum hours, and go the hell home. Pretty easy, all told.
Working at the big clubs is a lot different than say Babes or Diamond Cabaret. Every club is different though. Every manager is different. The clubs that cater to the tourist industry is a lot more restrictive than the local dives like Talk of the Town etc. Clubs also come and go here unless it's OG, Sapphire, Treasures, Palomino.
