Some places are a super quick 'Wanna dance' hustle, and some times will be that way even in clubs where it's not the norm -- final hour of the night, for example.
One thing that worked for me was (and timing will depend on the normal hustle speed of the club) offering back rubs for $10/song. This seemed to be an especially good deal when the dance price was $20-25/song.
Pricing structures vary greatly among clubs, when you go looking at places to work, ask about them. The price info is one of the top things I consider when eyeing a club to work at. Give yourself some time to play with the numbers. Even in clubs with lousy price structures, you can sometimes find ways around them by charging for a separate, smaller block of time.
