Use your ones and small bills for all your food and drugstore purchases. Cashiers are always thrilled when someone pays with small bills (means less trips to get change from the office or bank) & waiters and waitresses prefer being tipped in cash too.

Sometimes when a customer is looking to break a $20 I’ll jump in and excahnge my singles. I don’t know if your club is cool with that, but it’s never been a problem for me.

My club don't care. As long you don't pull a fast-one on the wrong person like the manager's best friend.

I've never had a club keep a record of exchanging bills. I've always had managers begging me to exchange small for larger bills because they run out of singles.
Do you have an example of bill exchange being recorded?

Yes, this seems strange to me as well. Customers often come in with larger bills to trade for singles to tip at the bar and the stage. OP should be giving those singles right back in tipouts to whoever would be refusing to switch them out during the shift.
Although maybe OP meant a way to keep her total earnings, rather than the denominations, off-record? In that case I could see why she wouldn't just go to the bank the next day and trade them in.
