Usually the way to disable a tank is knocking out a track.
There was also a guy that stole a tank, knocked apart an RV like it was paper. He got stuck on a median if I recall.

The usual way to kill a tank is a kinetic energy projectile, such as HEAT or APFSDS. Disabling a track on a tracked vehicle is only a mobility kill. Which, would be adequate for Herr Heemeyer, the guy in CA whole stole the tank from the National Guard, or the one who stole the M113 in Virginia. But a fully armed and crewed tank can suffer a mobility kill and still use its weapons.
