I would offer my two cents, but I am not sure it is wise to spark off yet another round of "union vs. non-union" debates.
I'll just leave it at the fact that the most proven way of handling things is actually neither.... Unfortunately, it is almost the most difficult.

I lived in San Fran for the past year.
First, The Lusty Lady is NOT a strip club!!! It is a peep show with girls dancing behind glass. The guy goes into a phonebooth like closet, inserts a dollar into the machine, and the blinds go up for 4 minutes. During this time, he can watch the three girls dancing behind the glass. It is soundproof so he can talk to them, and the dancers can't see his face.
There is a tip jar at the front desk that all the girls can split. Since there is no way to give the girl a tip, they are on payroll for $13/hour and are given insurance benefits, etc. Hence they are "union" and every other stripper in the city is "nonunion"
Back in the mid-80s there was a big legal battle in SF to get equal rights for sex workers. (They have a website if you are truly interested in learning more, search under San Francisco exotic dancer alliance.) and the recent press is because they are striking for higher wages.
To be honest, the Lusty Lady dancers were somewhat belittled by other SF dancers. You know, like working there is your last resort when you get too old to be hired anywhere else.
Its right next door to the Hustler Club. I went in there once before my shift, and the woman dancing for me was a 250 lb grandma in a feather boa.

Also in the book "Diary of a Manhattan Call Girl" there is talk about unionizing and stuff like that. It's a really good book, I recommend if anyone cares.
