Kym's right though. They worked it out so that the number you come out with after calculating, will be the same. The bastids.

It is probably a mathematical property of positive integers. (Guess I have to prove it to myself now.)
Like the sum of the digits of the addends, summed = the sum of the digits of the sum.
If you look through the chart, you will see the same image is repeated in several spots. Indeed, it is using a mathematical property where you end up, not with the exact same number, but with specific numbers, while others are never calculated. The ones that are not possible to calculate using that property show a different symbol.

Notice that no matter what number you start with the number you end with is a multiple of nine.
9 - 18 -27 - 36 - 45 -54 - 63 -72 -81
It doesn't matter what two digit numbers you add together and subtract from your original number. You will always end up with a multiple of nine between 9 and 81, hence that's how it knows what symbol you're looking at.
The symbol chart changes each time you do it, (which helps add to the confusion), but no matter what chart you are looking at, those nine numbers listed above have the exact same symbol.

Ohhhhhh.. Holy crap, I was getting all freaked out.. I guess if you don't actually think of a number and then complete the adding and subtracting - instead you just think of a random number - the crystall ball might be wrong..
