any w-2's?
Take in a letter from your boss. Make sure it has the business name, address and phone number on it (most places prefer to have it done on letterhead). Have your boss state your employment status, how long you have been at the job and possibly how many hours per week you work. Hope this helps. Good luck with the lease.
if possible, refrain from letting them know exactly what you do
This is when your tax return comes in handy--when you're an independant contractor/self employed, it's pretty much the only proof of income you have.
yup, show the landlord a couple of tax returns and a few months worth of bank statements showing your deposits. What they're actually interested in seeing is some reasonable proof that you are earning money on a consistent basis and can thus afford to cover your rent payments. Remember, as an independent contractor you are not actually 'employed', you are in business for yourself. Thus legally the landlord has to treat you the same as they would treat a storeowner, plumber or other small business.
