I just bought a Lil Mynx steel and while, yes, the grip is nothing like brass, it's not impossible to work on. I can't do much of anything yet but I love it anyway!

I personally love my stainless steel pole. I have no problem doing pole tricks and spins on it. (it's lil mynx) I have worked on both brass and stainless steel and my preference is for stainless steel. It's smoother and feels better to me. Since I wear boots most of the time grip isn't a huge issue for me...they help to hold me when i'm upside down.
As for your question about paint chipping...no. My pole instructor has a black lil mynx pole in her basement and she LOVES it. She hasn't had any problems with it and says that it's her favorite out of all of them.
