I hate guac. To me, it looks and smells like baby shit.
K likes it though, and he makes a guac that a lot of people like... he mashes up some avocados, roasts garlic in the toaster oven and adds that, and mixes it up with salsa verde and cumin.

I use to HATE it too, but this one didn't even taste like your typical guac. I want to make it just like the one I had yesterday. I'm looking online, some are similar.

I have a professer that's Brazilian, they eat avacados like fruit there....he told his mom he had avocado on a sandwich and she goes "ewww!" hehe

I'm with you. Hubby likes good guac, but I cant stand anything that has anything to do with avocados. Baby shit is a good comparison...
K's recipe sounds like something he'd like though. Maybe if he's a good boy I'll make him some next time we do mexican night for dinner!(I know nothing about fixing avacados...do you cook them before mashing? How?)

No, you don't cook them. Get very ripe dark ones (soft but not squishy), peel them and remove the pits, and mash them in a bowl with a fork. The only cooking is the garlic; he tosses several cloves with just a little olive oil, roasts them in the toaster oven, and then mashes them up too. Just stir in the rest to taste and you're done. I tried some and it's much better than other guacamole I've had, but I still just don't like avocado.

Ohhh, one of my favorites. I never liked it as a kid, but turns out I was just exposed to crappy quality.
My foolproof recipe:
- Avocado, of course.
- A little finely chopped red onion.
- A little minced jalapeño (roasted OR not, I like either one).
- Fresh chopped cilantro. This cannot be stressed enough.
- A squeeze of lime juice. Also crucial.
- And garlic SALT.
All of the above are to taste. Mash with a fork to desired chunkiness.
I think you can't go wrong if you stick with those 6 items. A frequent item for debate is often whether or not to include (1) cumin or (2) tomato, but I like it best without either.

Rosewhite - thats how I make Guac too tho I do add a tiny bit of EVOO ... But really u can make do by crushing some avocados, a little lime or lemon juice and EVOO then season to taste and I am in chip heaven ... Im getting hungry.,, Also well ripened avocados... they mash up better IMHO ...

Fresh homemade salsa is also the best. My friend's mom made one that had pineapple, tomatoes, peppers, corn, cilantro, onions, and some other stuff in it. It was the best.

Avocado
Goya brand Pico De Gallo (Mild or Hot, your choice) - experiment, add enough to sweeten the guac, and give it a bit of color and texture.
Kraft Ranch dressing - experiment, not too much, enough to smooth it out and add a bit of creaminess.

you know, after i read this post the boy and i went to eat mexican, and when the waiter asked if we wanted any appetizers, my bf was like, you want some queso? i'm like, noooooo today i want guac!!! :) so thanks :) it was grand!

It's funny. I despised the fruit as a child, and then ... someone turned me on to a fresh avocado right from the tree, cut in half, handed to me with nothing but a spoon. It was fuckin delicious!
Then of course being raised in So Cal you grow up around Mexican cuisine, and guacamole... amazing, yummy, creamy, sweet... I guess it's one of those foods you have to grow up with ;)

Where in Van did you go? I've yet to find a good Mexican restaurant in town.

She's gotta be in Texas if there's queso and guacamole. Though there's fabulous Cuban and Salvadoran places in Vancouver.
I love avocados so much. mmmm. Creamy green goodness. I don't use a recipe for guacamole, just avocados, salt, lime juice. Possibly some minced garlic and chili powder for kick. mmmmm. Essential for football viewing in TX.
I'm glad I'm going to Austin on Wednesday 'cause now I have to go to the Magnolia and eat some of that crazy queso/guacamole combo dip they have.
