Oh God, I've got a million and one suggestions. The soundtrack from Sid and Nancy has some instrumentals by Pray for Rain that are haunting.
If you want good mainstream, more recent alterna-rock, try Queen of the Damned, Spawn and Underworld.
Hedwig and the Angry Inch and Velvet Goldmine are great off-beat ones.
I love, love, love the soundtrack from SLC punk and the music from Braveheart.
But, ya know, my personal fave is still Valley Girl. Some great 80's music without bombarding you with too much stuff that you heard on the radio back then.
The score from the latest version of King Kong was just gorgeous.
And of course there's the Ennio Morricone score for "The Mission". And Michael Nyman's for "The Piano". Oooh, and what about "Baraka"? Stunning music from a variety of sources, including Lisa Gerrard from Dead Can Dance.
Philip Glass - many of them, of course, but in recent history, I particularly liked "The Hours".

Sorry to doublepost. But I just thought of Angelo Badalamenti's work for David Lynch. Do you have "Twin Peaks" and/or "Fire Walk With Me"? Any of his stuff, really. Badalamenti + Julee Cruise especially =hauntydreamy.

I really enjoy the George Fenton score for "Dangerous Liaisons". But you know, maybe that's just cuz that movie rules. There's some Bach, Handel, and others used on it, but the overall effect is delicious.

Back to the Future's my personal fave. IIRC, I think that one's had the most instrumentation of 'em all.

My favorite "new" film composer is Marco Beltrami-Hellboy, I Robot, are all very good, a little quirky, but still entertaining!
Really though, load up on the "masters" Williams, Goldsmith, Morricone, maybe some Elfman or Kamen or Silvestri... And the CLASSICS... Jarre, Korngold, Mancini are usually pretty safe bets...
I geeked out when I discovered that Shostakovich had written a few film scores! but then Shostakovich is my HERO, and his style, even the NOT score stuff, is still very visual, and well worth checking out.
As for specifics...
Dr. Zhivago is classic, has haunting moments, as does Lawrence of Arabia.
The track Fathers Funeral from the Hellboy soundtrack is INCREDIBLY beautiful and haunting. As far as action music goes, I don't care for Braveheart a whole lot-I prefer Silvestri or Kamen for action scores. I'm almost embarassed to admit I own the Van Helsing score.
If you'd like more of a jazzy twist- try Morricones Legend of 1900 score. jazzy/ragtimey, haunting, danceworthy and moving... THis has to be one of my favorite scores ever. He's better known for his spaghetti westerns, but this blows Magnificent Seven out of the water, IMO.
I also love Norths soundtrack to Ghost, but thats simply because Unchained Melody is THE most perfect song, IMO and a whole SCORE based off it is heaven.
I have to raid my CD collection for more rec's, if you want them.
This is a particularly big area of interest for me!

Totally "Jurassic Park." I was on a helicopter ride in Kauai on my honeymoon and we went to the same waterfall where the helicopter lands at the beginning of the movie, and that score was playing in my headphones... and I burst into tears. It was that damn beautiful.
Can't believe I forgot Peter Gabriel's work for both "Birdy" and "The Last Temptation of Christ".

"Whisper of a Thrill" off the "Meet Joe Black" soundtrack is beautiful and haunting.
The Shining and Eyes Wide Shut themes are very beautiful, very haunting.
I also LOVE the Interview With A Vampire soundtrack, the album is sooooooo beautiful.

I think one of my favorite soundtracks of ALL time has to be the Queen of the Damned soundtrack. I can't help but feel sexy when I listen to that.

I'm actually surprised no one has mentioned Christopher Young. Flowers in the attic, ghostrider, hellraiser hellbound etc...
Last of the Mohican Soundtrack. "The Kiss", is one of my all time favorite songs. Totally sappy, but beautiful scene in the movies occurs during this song, in which Daniel Day Lewis encourages Madeline Stowe's character to, "stay alive no matter what occurs", before jumping over a waterfall cliff. Ah, the drama. guess you would have to see the movie. But a great soundtrack with soulful scores.
I love the Virgin Suicides soundtrack. If you love french electronica say oui!
