Anyone know the best way to roast pumpkin seeds? I tried it last Halloween and they ended up tasting like pumpkin flavored rubber.

Mine did to last year.
I learned this tip:
Microwave seeds for abotu 1min before you roast them. This dries them out.
If you try to roast them before they are dried out, they get nasty
^Yep, I usually leave mine out for a day to dry out. Then I coat them in olive oil, sprinkle garlic salt and roast them. Mmmmmtasty!
Another way is with olive oil and sprinkle some parmesian cheese over them. Double yummy!
And I know it's not pumpkin seeds, but these go great with them... Get tortillas, use a halloweenish cookie cutter and cut shapes out of the tortilla, dip them in butter then sprinkle with whatever seasoning you like or cinnimon sugar and bake them. Yummmmmmy! I made little bats this year and served them with apple butter.

I also leave them to dry out and I roast them at a very low temp for quite a few hours. Makes them crispy so that they do that snap thing you want!

HA! I'm eating some right now! but just store bough![]()

i put season salt and oil on mine because this is how my mother made them. i dont dry them out either i just put them on a really high temp for about
10 min. or untill brown. like 400 degrees. so yummy.

I roast them at 250 degrees for at least 5 hours. My oven is kinda off though, so that's just a guideline. Could take more or less.
I go about 350 and roast them for about an hour, hour and a half. I saw some ideas for spicy pumpkin seeds, and pumpkin pie pumkin seeds too, going to try that this year.
Ok, tomorrow I am definitely carving a couple of pumpkins so I can make some roasted seeds. They taste sooooo good with some Octoberfest beer.

I tried a recipe a week ago that I got online that called for worcestershire sauce and a few other spices. It was really bad tho and I wouldn't recommend it.

I leave them out for 24 hours...then coat them with olive oil, salt and a little bit of cayenne pepper. Joe loves those. I prefer the roasted ones with the pepper, though.
250 degrees for a few hours (until golden).

Thought I'd add my recipe to the batch. This is a way to get 'em done quick and yummy.
Straight from the pumpkin, I fry them in butter on the stove top. Add paprika (or cayenne) and salt and fry until slightly brown. Then spread 'em out evenly on a baking pan and stick in the oven for like 20-25 mins at 350 until they're brown and crispy. Then salt the crap out of 'em while they are still hot. So good and easy.
