    Default Thnaksgiving Recipe Bonanza!

    It's coming up in the Random Thread, it came up in a thread about the wonders of Oregon, I'm sure it's coming up in others, so I thought I'd start one of its very own . . .

    Thanksgiving! It's next week! Yes, already! Yikes and yay!


    Are you prepared? And more to the point, what are you preparing?

    One thing I'm making just for my own pleasure is our own Yekhefah's Rummy Sweet Taters! For a catering client, I'm making a Pumpkin Cheesefake (vegan tofu pumpkin cheesecake), Cheatballs (tofu meatballs with Vegan Pesto Alfredo), just plain ol' mashed potatoes, and a corn pudding. I've got all the recipes covered except the corn pudding; still hunting for a good one. Anyone?

    What are you guys making? Anything you're looking for yourself? Helpful hints?

    arI want a cornbread stuffing recipe that has no dairy or lard, or can be easily substituted.....

    I also had a butternut squash and potato mash at a charity gala the otherday, and it was to die for! I'm going to try and replicate that

    oh, and pies are super easy! what type do you want?

    Here are two of my favorite recipes, taken right from Food Network:

    Fresh Cranberry Relish (Tyler Florence)

    2 pounds fresh cranberries
    1 cup sugar
    1/4 cup Grand Marnier liqueur
    1 orange, zested and juicedPlace all the ingredients in the bowl of a food processor, pulse several times to breakdown the cranberries and incorporate the ingredients; it should still be a bit chunky. Allow the cranberry relish to sit at room temperature for at least 30 minutes, so the flavors can marry.

    Pumpkin Gooey Butter Cake (Paula Deen if you couldn't tell by the word "Butter" in the title of the recipe!)

    Cake:
    1 (18 1/4-ounce) package yellow cake mix
    1 egg
    8 tablespoons butter, melted
    Filling:
    1 (8-ounce) package cream cheese, softened
    1 (15-ounce) can pumpkin
    3 eggs
    1 teaspoon vanilla
    8 tablespoons butter, melted
    1 (16-ounce) box powdered sugar
    1 teaspoon cinnamon
    1 teaspoon nutmegPreheat oven to 350 degrees F. Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.
    To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.
    Serve with fresh whipped cream.

    I GOT IT! The Real Food Daily cookbook has one that looks scrumptious. In fact, I think I'll add it to my own menu. Let me type it up here . . .

    I'm driving down to Mom's house in Virginia. My brother is flying in from LA, and my uncle is coming from Utah. Mom asked me to make the green bean casserole, that's it. I'm sure it will be quite a spread since my Mom tends to make enough food to feed an army. Guess who's bringing home the tasty leftovers? Oh yes. I can't think of any recipes to post really, we make most of the "basics".
    waffles are just pancakes with little squares on them.

    When I was very young, there was something at the table at thanksgiving. I have no clue what it's called, but SOMEONE on here must know! It had marshmallows, corn flakes, sweet potatoes...i KNOW that sounds gross together, but it was sooo freaking good. Does anyone know what that's called ?

    Sweet potato casserole by the sound of it. Never saw it with cornflakes but the yams and marshmallows are standard.

    I'm making cookies for Turkey Day this year (surprise, surprise!), but I don't share my recipe with anyone! I'll dig through my other recipes and find some good ones for you guys, though.

    As promised, from "The Real Food Daily Cookbook" by Ann Gentry

    Corn-sage Stuffing

    ¼ cup + 1 tsp canola
    1 large onion, chopped
    2 large cloves garlic, minced
    8 stalks celery, finely chopped
    4 carrots, peeled & finely chopped
    3 tablespoons Holiday Herb Mix (recipe follows)
    1 tsp sea salt
    1 tsp freshly ground black pepper
    1 ½ cups water
    3 T tamari
    1 cup fresh parsley, chopped
    12 cups coarsely crumbled Southern-Style Skillet Cornbread (recipe follows – about ¾ of the bread)

    Preheat oven to 350.

    Coat a 13x9 baking dish with 1 tsp oil. Heat remaining oil in a large heavy pot over med-high heat. Add onion & garlic and sauté for 5 minutes, or until onion is translucent. Stir in celery, carrots, herb mix, salt and pepper. Sauté for 5 mins, or until veggies are crisp-tender. Stir in water and tamari and bring to a simmer. Reduce heat to medium low, cover, and simmer for 8 minutes, stirring occasionally, or until vegetables are tender. Stir in parsley.

    Place cornbread in large bowl. Add veggie mixture, toss to coat, and transfer to baking dish. Cover dish in foil and bake for 30 minutes or until heated through. Uncover and continue baking 20 minutes, or until crisp on top.

    Holiday Herb Mix

    ½ cup rubbed dried sage
    ¼ cup dried marjoram
    ¼ cup dried rosemary
    ¼ cup dried thyme
    1 tsp freshly ground black pepper

    (I’d personally halve this for my own purposes.)

    Southern-Style Skillet Cornbread

    2 cups yellow cornmeal
    1 cup unbleached white flour
    1 cup whole what pastry flour
    2 T baking powder
    2 cups plain soymilk
    1/3 cup maple syrup
    1/3 cup + 2T canola oil
    1 tsp sea salt

    Preheat oven to 400. Sift the cornmeal, flours, and baking soda together in a large bowl. In a separate bowl, whisk the soymilk, syrup, 1/3 cup oil, and salt. Stir wet ingredients into dry and set aside

    Add remaining 2 T oil to a 12 inch cast-iron skillet. Heat on high until oil just begins to smoke. Pour batter into skillet and spread evenly. Transfer skillet into oven & bake for 25 minutes, or until firm to the touch and golden brown on top, and a toothpick comes out clean.

    WHEW!

    My turkey day menu:

    appetizers:
    warm dates with sea salt and lime
    stuffed eggs with caviar
    sugar and spice walnuts
    tofu stuffed mushrooms

    turkey:
    i'm still looking for the perfect recipe.....

    sides:
    turkey gravy
    butternut squash and pototo mash
    gingered beens
    cornbread dressing
    quick roasted squash medley
    sweet glazed carrots

    desserts:
    double chocolate dipped fruits
    yek's rummed sweet potatoes

    that's what i've got for now! I'm going to add more later I'm sure. if anyone wants any of these recipes I'll post it.

    I basically make a vegan version of all the yummy things I loved as a kid. I do a tofurky glazed with a simple citrus sauce (OMG), a green bean casserole, cranberry walnut stuffing, cranberry sauce and pumpkin pie. It's amazing how easy it all is. Sometimes I make a "Thanksgiving" dinner at an odd time of the year because it's just such a wonderful combination of goodness.

    I love Tofurkey*. I once entertained my entire birth family on our first Thanksgiving together by getting the entire boxed Tofurkey dinner, complete with tempeh drumsticks, Tofurkey giblet gravy, and wishbones made of Tofurkey Jerky.

    It makes me happy just to say it. "Tofurkey". Hee. For the life of me, I can't figure out why they haven't invented a faux ham product called "Sham". Maybe that'll be my million-dollar retirement idea.

    That's a freaking awesome idea! It might not be called "sham" but you can get ANY fake meat you want on this site: www.vegieworld.com

    They have whole "hams," "chickens" as well as crazy seafood....lobster, scallops, prawns, eel, cod...used to have haggis but it wasn't very popular. Imagine that!

    Sham! Brilliant!

    My million dollar food concept are meat-filled donuts....I'll call them monuts! Seriously they'll be like empanadas or meat pies with all that yummy glazed deep-fat-fried donut goodness around them. In a country where you can get mashed potatoes, gravy, corn, chicken and cheese in one dish, I think they'll be a hit.

    I've had vegetarian haggis. My grandparents took me to a Burns Festival one year (they're into the Scottish heritage thing) and there was regular haggis or a veggie option. The veggie haggis was stuffed into a hollowed onion instead of a bladder but still looked like the real thing. It tasted okay. I'm not really into Scottish/British food.

    I don't really know what we're doing for Thanksgiving yet, but I'll make the sweet potatoes and probably a few other things. I'm looking for a recipe for that casserole you always see at Southern Thanksgivings; it has broccoli, rice, and I guess cream of mushroom soup and some other stuff and it's all topped with cheese. I love it but can't find a recipe that looks like it, and I don't want to call my elderly aunts out of nowhere just to ask for the recipe.

    I might make corn casserole too just because it's easy and delicious. I make it for holiday dinners sometimes and it always goes over well.
