    Default Cooking Chicken

    This is probably stupid of me, but can you season chicken breasts with salt/pepper/lemon pepper, and then bake it in the oven, or would that dry them out? Should I marinate them in something first? I'm making dinner tonight and want to try something a little new.

    Add a little water and cover with aluminum foil andthey wont dry out.

    Depends on what cut of chicken it is for me. If its chicken breast you can season it with all of that then put it in a 9x9 pan. Add about 1/2 cup of water. Bake @ 350F for 45min then uncover for 10min to cook.

    Yep. Little bit of water (llittle) or even a little chicken broth from a can. Cover with foil, then uncover for the last ten minutes of baking. If you have olive oil or anything (butter?) to put on the chicken before you season, that's tasty too.

    The girls may have meant this but wrapping them (baked potato style) is awesome with fish
    (capsicum, onion, fresh herbs ect and butter opened straight out onto rice. Yum-Yum!)
    so it would definitely do the trick with chicken.

    I've never had dry chicken after oven roasting, but I use tenders not breast--smaller cuts so they cook faster. Just cook it at a low temperature like 325 and keep an eye on it.

    Funny, but I've got a chicken in the oven right this instant. I start it out on high heat (425) for 30 minutes, then drop it down to 350 ....this way the outside gets crispy and nice. Also a foil tent is a wise idea.

    CE, try doing that but cover the white meat with foil before changing oven temps, I've had lots of luck with that.

    Also, instead of water, I use chicken broth with some kind of aromatic when I bake. I really like using lemon with fresh thyme and rosemary as they really make the chicken super fragrant!

    I cook my chicken breast at 350 in a glass bakewear dish and keep a very close eye on them! Check them after 20 min. then about every 3-4 min after that until a cut you make through the center of one is still juicy, but not pink. As soon as it's not pink take it out.

    Fried chicken is the tastiest, IMO.
    I coat the chicken pieces (drumsticks and thighs usually) in two beaten eggs, then put them in a bowl of flour, a tsp of Adobo with pepper and a little dried parsley. Sometimes I use a little cajun spice instead of adobo. Coat them in the flour/spice mixture then put them in a pot of super hot vegetable oil. When they are a golden brown, they should be finished.

    I set my chicken breasts in foil with lemon juice and garlic.... without defrosting, and bake for 30 - 35 minutes. Not too seasoned but still flavorful.

    I never bake chicken breasts unless they have skin on them and the bones are in. If they're just boneless, skinless breasts, I broil them.

    The best, juciest chicken ever:

    INGREDIENTS

    • 8 skinless, boneless chicken breast halves
    • 1/2 cup all-purpose flour
    • 1 teaspoon poultry seasoning
    • 1 tablespoon olive oil
    • 1 tablespoon butter
    • 1/4 cup Marsala wine
    • 1 cup chopped portobello mushrooms
    • 1 cup chopped onion
    • 1 teaspoon dried rosemary
    • 4 slices mozzarella cheese (I use Swiss)




    DIRECTIONS

    1. Season flour with poultry seasoning. Dredge the chicken breasts in the seasoned flour. In a medium skillet over medium-high heat, fry the chicken in the oil for about 5 minutes each side, depending on the thickness. Remove the chicken and set aside (keep warm.)
    2. Deglaze pan with Marsala wine (deglazing is swirling or stirring a liquid in a pan to dissolve cooked food particles remaining on the bottom). Add the chopped mushrooms, chopped onions and rosemary. Saute for 5 minutes over high heat.
    3. Return the chicken breasts to the skillet, baste with drippings, put cheese on the breasts and cook for another 2 1/2 minutes with the lid on tightly. Don't touch the lid! Remove from heat and let stand for 10 minutes, until the breasts cook through. Check the seasoning and adjust. You will have the plumpest, juiciest chicken breasts you can imagine!

    I'm also a big fan of broiling...

    I got a new rice cooker with a steaming tray, so when I make rice I steam seasoned, cut up peices of chicken, too. I just toss the chicken in a little low sodium soy sauce, some minced garlic, onion powder, and sesame seeds. It's pretty yummy and healthy, too. You could do the same stovetop or in the microwave.

    Take the chicken and put it in a plastic zip lock baggie. Add enough olive oil to coat the chicken and then add your spices (whichever you want to use...what you have is fine). Shake it up, rub it all around and then let it sit to the side while you:

    Cut up some peppers (red/yellow/orange are my faves), broccoli, carrots, and green beans.

    Take a piece of foil (enough to put the chicken and all the veggies on...one serving per packet). Lay a piece of chicken and then add the veggies. Fold the foil in half and crimp up the edges (roll them up 2 times and then really make sure they're sealed so nothing leaks out).

    Put the oven on 425 and when it's all warmed up, pop the foil packets in and leave to steam/cook for 30-35 minutes. Take them out of the oven and either open a small corner and drain the juice or open one side of the packet and dump everything onto the plate (I prefer to put the juice on the plate).

    The veggies are delish this way and the chicken is cooked/steamed in the veggie juices and very juicy. This is Makayla and Joe's favorite dinner and it takes about 15 minutes to prepare it (and about 30-35 minutes to cook it). Nice and fast.

    Definitely use a flavorful liquid like broth, not water. But only a little.

    I like to drizzle chicken with a little lemon juice and sprinkle it with oregano and bake it. Really easy and so delicious! Or you can use lime juice and chili pepper.
