    Default Help me with this recipe

    • 1 cup chopped onion
    • 1 cup cubed, cooked boneless chicken breast meat
    • 1/2 cup chopped celery
    • 1 cup whole peeled tomatoes, with liquid
    • 1 cup sliced carrots
    • 2-1/2 cups chicken broth
    • 1/2 cup sweet corn
    • 1/2 cup peas
    • 1/2 cup sliced zucchini
    In a large soup pot combine the onion, chicken, celery, tomatoes with liquid, carrots, broth, corn, peas and zucchini. Stir together and simmer over medium low heat for 1/2 hour, or until vegetables are cooked and tender.


    I want to change the chicken to beef and add a few chopped potatoes. I figure if I chop the potatoes up small they'll cook faster. By doing these things how much longer will I have to cook it?

    Add the potatoes to the plain broth and start it cooking 10-15 minutes before you add the rest of the ingredients. An extra splash of water is probably a god idea too.

    Soups are hard to overcook or mess up, so you could really just add the potatoes at the same time as the rest of the ingrediens and cook it until the potates are done, but less cooking preserves more nutrients, so I'd do the potatoes first thing.

    True but if she's cooking beef, the longer she cooks it at a low temperature, the more tender the beef will be.

    Also, TM, not sure what cut of beef you're using but it seals in the meat's juices if you saute it real quick before you add it to the stew. Just stick it in a pan on high heat to char the outside but don't cook it all the way through.
