Pick up a copy of the book "Oahu Revealed", otherwise known as the blue bible of the islands. Great photos with recs for beaches, hikes, activities, lodging, and eats. You can get it amazon for $11 or so.
Don't worry if people tell you "Yuck, Waikiki is just a big city with a beach", the rest of the island is easily accessible,even by bus. Most all the high end beach front hotels have outdoor bars and entertainment in the evenings as you watch the sun set. Lots of restaurant choices in Waikiki, or you can venture out for "locals" dining. At night on the main drag (Kalakaua Ave.) street artists of all types are out. Free evening hula show near the statue of Duke Kahanamoku at the Kuhio beach section of Waikiki.
