    Default Recipe Help!

    So, my one year anniversary is coming up with the hot boy of mine. I'm not one to really get all into anniversaries, but I wanted to do something nice for him.

    We go out to eat...basically constantly. So I thought it'd be nice if I cooked him a nice meal...and possibly serve it in a french maid outfit. Or naked. I haven't figured out that part yet.

    But I am clueless! He's a big meat and potatoes guy, and loves barbecue, but I don't want to make him the typical steak and potatoes, I want something special!

    Does anyone know of a good meat-based recipe that isn't too complicated?

    As for dessert, he only likes pies...but I am baking clueless. Any ideas of where to look for a good (easy) recipe for blueberry or cherry pie?

    I don't know about the main course, but if you don't mind cheating a little bit on the pies, I can help

    Go to the store and buy the frozen pie crusts (they typically come in packs of two, and really, they taste exactly like homemade). Buy blueberry or cherry filling. The can of pie filling has the recipe on the back, and the crusts tell you whether or not you need to pre-bake them or anything.

    Really, I suggest getting the frozen pie crusts, because pie crust can be a BITCH to make. Good luck!

    Pie crust is a pain in the ass and there are some good frozen ones out there. I'm a big fan of scratch as a general rule, but if you don't want to spend all day perfecting pie crust then a frozen one will do you just fine. Please don't do canned filling though! Blargh, that stuff is gross. Fresh pie filling won't be hard at all. I don't like fruit pies so I can't help you there, but there are a trillion recipes with helpful reviews at .

    That said, every man I've ever met has gone batshit for a traditional Southern chocolate pie (not French silk, but rich chocolate pie). My father swears he married my mother for her chocolate pie. She won't give me her recipe - I'm hoping it's in her will, LOL - but I've tried and it's pretty close. This sounds pretty good too, and the great thing about ice cream pie is that you can make it the day before and leave it in the freezer so you don't have to worry about it while you're trying to cook a nice dinner.

    As for dinner... hm... was gonna say shepherd's pie until you said he liked pie for dessert. Don't want pie overkill. Hey, I make a honey mustard chicken that everyone loves; it was my ex-husband's favorite dish and K requests it often. You could make that and serve it over rice with a side of baby carrots steamed with dill and butter and another side of broccoli. Still pretty basic and guy-friendly, but nice!

    Here's the chicken:
    Preheat the oven to 350 F. In a bowl, combine 1/2 cup spicy brown mustard (or Dijon mustard), 1/2 cup honey (microwaved 10 seconds to thin it), and about a tablespoon each of paprika and Italian seasoning. Mix it well with a fork until blended. Lay out 4-6 chicken breasts or thighs in a casserole dish, bone side up, and spoon HALF the sauce over the chicken. Bake 30 minutes. Take the chicken out and turn it over, and pour over the rest of the sauce. Bake another 15-20 minutes or until the juices run clear. Serve over rice - the sauce mixes with the pan juice and makes a delicious gravy to spoon over the chicken and rice. Brown rice works great but white is fine too if he doesn't like brown. I like the easy Success Boil-In-A-Bag because I always burn rice.

    For the veg:
    I have an electric vegetable steamer and it's one of my favorite possessions. If you don't have one, get those microwave steam bags or just put the veg in a pot with a very little water, broth, or juice (apple juice is great for steaming baby carrots). I'd do the carrots and broc separately. Simmer them about 10 minutes or until they're done. Toss the broc with a little butter (trust me, men LOVE real butter and it's better than margarine because you don't need as much of it) and grate some white cheddar over it. Toss the baby carrots with a little butter too and sprinkle with fresh chopped dill.

    Damn, now I want to make this. Maybe I'll do it next Monday for K's last night in town.

    HAHA Yek I was thinking of you.

    You gave me that recipe before...and it went perfectly until I tasted the sauce. It was so freakin good, I couldn't stop "tasting" it, and I had to make a whole new batch.

    Oh whoops, didn't mean to do a repeat! I just tried to think about what's been most popular with the men in my life. Chicken-and-rice is one of those comfort staples that guys really love, it's not intimidating and it's easy. I once spent four hours on an elaborate dinner for my ex-husband for a special occasion and he came home and said, "Oh, I thought we were having honey mustard chicken." He was so disappointed.

    For special occasions with my Hubby, I like to make a surf-n-turf meal. Filet mignons and broiled scallops is really easy and very sexy and romantic. Pairs well with simple side dishes like steamed asparagus or less-simple like risotto. He also has pretty simple tastes, and I find this is a nice jazzed up twist on the meat-and-potatoes.

    I second the chocolate pie!

    If he's a staunch meat and potatoes man, maybe try a new spin on those. I make rosemary roasted potatoes that are great. Just melt some margarine or butter (2 tbl) in a coffee cup, and add some olive oil, salt, pepper, basil, parsley, cayenne pepper, and rosemary, then pour it over the potatoes, and toss them (Pam a sheet of foil before that or they'll stick). Bake until they have a slight crunchy outside.

    As for the meat, if it's red meat or salmon, try a new dipping sauce instead of barbeque, worchesteshire, or A1. Mix together about 3/4 a cup of sour cream, 1tsp of mayo, horseradish cream to taste, and lots of dill weed. It's the Outback's Tiger Dill sauce and it's amazing on steak and fish.

    Then, for dessert, instead of the normal fruit pies, try making a buttermilk pie. My sis's b/f is a big ol' Georgia boy and that's the only pie he'll eat. Throw some fruit on top for garnish.
