    Default Bread/ bread machine ?

    I've never made bread before.

    My mum gave me a bread machine. So, I put in the ingredients, and put it on the 'dough' setting, and it made some nice dough, which then sat for an hour getting all high and fluffy. I wanted to take it out of the pan so that I could remove the dough hook before it cooked, or my bread would have been all dented. So I did, but of course when I did that, it lost all its volume. So I put it back in with a damp teacloth overtop for another rise before I bake it.

    Is it going to turn out weird??

    Shouldn't. I bake challah every Friday and do multiple proofings.
    First as the large batch of dough.
    Then I punch it down and divide it up into individual loaves.
    And again, I punch it down and braid it.
    I let it rise a little bit more before I put it in the oven, maybe about 15-30 minutes.

    I've found Red Star yeast to be the best out there. Which is surprising because it is much cheaper (in dried and fresh forms) than most of the other brands out there.


    The damp tea cloth is perfect - but is it in a relatively warm area? That will help too.

    As long as you let it rise properly the second time it should actually be good for the texture.
