Ive never been a pro at applying brush but now I am curious if there is any specifac way I should apply it to make my cheekbones appear more high/defined.

If you do a search for some of LatinaRose's makeup tutorials, she goes over blush in one (maybe all?) of them. Her explanations are great. (I'd try to explain, but then I'd just confuse you and myself lol)
I believe you Dottie and you have my support
The best makeup artists I've worked with had me smile so the blush could be applied at the natural apple of the cheek, swept towards the ear.
To really accentuate the cheekbones you need to take a darker color, like a non-shimmery bronzer and swipe it directly under the cheekbones, out toward the hairline. Then apply your blush on the apples of the cheek, again blending toward the hairline. Last, at the top of the cheekbone apply a highlighter.
This will give your face definition and really bring out your cheekbones.
^^That's what I do.
^^I've gotta do this everyday. The natural, pink only on the apples, is great on some people, but I don't have any definition if thats all I do. At least not unless I diet down to about 80lbs, then I finally start to get some cheekbones.
What do you mean by a highlighter? A highlighter blush color? Or one of those makeup highlight pens that confuse me. What color should it be? Can it be shimmery, or not? I will check out some of Lat. Rose's tutorials then, I want my flat fucking slavic cheeks to pop out more now that I've lost a little weight and don't have so much face chub.

Yes you want something light and shimmery, a powder is usually best. It can be any shade from pale silver to deep gold depending on your skin tone. I like Belightful, which is a pale peachy bronze. I also use Vanilla piggie when it suits my makeup and I have a pale pink shimmery color (it's d/c from Tony & Tina, but you could use MAC Pink Opal piggie), which looks super sex kitten.
Usually I use a shimmery one. Mac has a few I like. Here is an example:
This in Silver dusk is great for fair skin
Another good one is Belightful:
