    Default Pie

    Yes, it's that time again... I'm entering a pie contest (it's between friends). I want to make a Key Lime pie and a Grasshopper Pie. I've never made either of these pies before but there are a ton of recipes online, of course. With so many different ways to make them, I'm confused. If anyone has any good recipes for these pies or tips about which ingredients are the best to use for these, please let me know.

    Don't use regular limes in a key lime pie. Don't use bottled "key lime juice" either. If you want to make good key lime pie, you'll have to hunt down actual key limes! (They're much smaller than regular limes and have a sweeter, stronger flavor.)

    that's exactly what I was going to say!!! My mom makes such a yummy one, but she's never shared the recipe.

    Trader Joe's has key limes. I have a relative who makes key lime pie, I'll ask where the recipe came from.

    almonds in the grasshopper crust.

    the key to a good key lime pie is sourness-- and focus on the cream because there is nothing as disappointing as a pie with lame cream on top.

    Cream of tartar is the secret to a good meringue. Sprinkle in a little bit (like a quarter- to a half-teaspoon) before you start beating the egg whites, and you'll get a great meringue. It helps if the egg whites are room temperature and not cold, too.

    Crap... Key Lime Pie is made with meringue? I suck at meringue! Well, I'll give it a shot, I guess... Meringue is basically handmade, stiff whipped cream, right? (Like I said, soooo many variations out there. Ack!)

    Like... this? Or, this? Or, this? Which recipe would be best?

    No, meringue is beaten egg whites. It's the white fluffy stuff on top of some pies, like key lime. It's not hard if you have an electric mixer. Just crack your room-temperature eggs into a glass, scoop out the yolks, and combine the whites together in a big bowl (make sure there's no yolk in it). Sprinkle in a little cream of tartar and have at it with the mixer until it's stiff. You'll know it's ready when you can turn off the mixture and pull it upward out of the egg whites, and they stay perfectly stiff and pointed. If the tips fall over, it's not done yet.

    Spread the meringue over the surface of the pie (which should be very well chilled by now in most cases) and bake it for a few minutes until the meringue sets and the tips of the peaks are pale golden brown. Voila, you have meringue. It's a little time-consuming but it's not difficult.

    I just looked at your recipes and only the middle one has meringue on it. As I'm not a fan of meringue myself, you'd get points with me for leaving it off too. A good way to garnish it instead is by using the mixer on real whipping cream, maybe with a bit of vanilla, until you've got thick real whipped cream. Put it into a Ziploc bag and snip off one of the bottom corners with pinking shears (like scissors, but with a zigzag edge). Pipe a decorative squirt of whipped cream onto each slice (or around the whole edge) and a very thin lime wedge. Or you can take the thin slice of lime and twist it in the middle so it makes an S-shape with the pulp out on each side.

    This is a pretty garnish with grated lime zest...

    Not anymore, but I used to be! I baked the most glorious pies and cakes all the time when I was in high school. Haven't been able to do it since, I think because of all the shitty little apartment ovens I'm dealing with. Oh well.

    You can check user ratings before you make it. I've found some really good stuff on there.

    I only eat key lime pies when they are that color ^^, no bright green artificial coloring. That's when you know it's made from real lime juice. YUMMM!

    Aw, I was going to add food coloring to make it really green! I guess it's a bad idea... I'm still putting fake grasshoppers on the grasshopper pie, though!

    Add green to the grasshopper pie, that's fine. But key lime pie shouldn't be brilliantly colored.

    You've inspired me, Bella. I'm about to go get some stuff and make a rhubarb pie. I haven't baked a pie in almost ten years, so we'll see how it goes!

    I'm glad I inspired some yummy pie goodness. I have to deal with a crappy apartment oven as well and it sucks! I bought one of those oven thermometers that I leave in the oven because it can't hold a temperature to save it's sorry antique life!

    I made apple-rhubarb pie. It was meant to be rhubarb, but I didn't buy enough so I had to throw an apple in there too just to round it out. It was damn good and it felt wonderful to bake pie again for the first time in so many years! I'm going to have to do it the right way (butter flavored Crisco for the crust, egg wash, etc) for K when he comes home. Thank you for the pie inspiration.
